Christmas Eve & Christmas Day Dinners

Before the year ends, let me share our Christmas Eve and Christmas Day feasts. Christmas Eve was spent with my brother-in-law's family. Unlike on Thanksgiving Day where there were an abundance of food, we made the Christmas Eve feast simple. Roast Turkey, dinner rolls, mashed potatoes, peas & carrots veggie mix, and chocolate cake for dessert. There was also an apple pie but we didn't get the chance to slice into it. For our Christmas ...

Cajun Roast Turkey

For our Thanksgiving's main star of the feast, I decided to use a dry-rub to season the turkey with. I went through my dried herbs basked and concocted my own cajun seasoning just like when I made the cajun fried chicken and cajun beef fajitas and tacos. Since I was cooking a 12-pound bird, I had to double the ingredients so by the time I was done rubbing the turkey and stuck it in the ...

Turkey Meatballs In Corabella Mezzaluna Ravioli

I'm still going through the various Corabella pasta that I received from the company to try. The family is enjoying the simple dishes I've come with that's for sure. This time around I used the Mezzaluna Ravioli to go along with the turkey meatballs. The raviolis are stuffed with 4 cheeses which includes ricotta and Gorgonzula. In a bowl, combine ground turkey, bread crumbs, dried basil, an egg, sprinkles of salt and pepper. Form small turkey balls. ...

Turkey Burger With Pimiento Cheese

My husband made lunch yesterday and he made Turkey Burgers with Pimiento Cheese. I contributed by putting the curly fries on a sheet pan, then sticking it in the oven to cook. He's sooo good at making patties. They're always in perfect round shape. He has taught me over and over again on how to make patties but I can never get it right. Maybe I'll shoot a tutorial video next time he makes burgers. ...

Turkey Burger W/ Broccoli Slaw

I found these 4-pc pack of wheat rolls at Wal-Mart and thought they would be really good as burger buns. At first, my husband wasn’t too sure about it but then I told him my idea of adding coleslaw on top of the patties so I was able to convince him in the end. We both decided ground turkey would compliment wheat rolls and coleslaw. INGREDIENTS: 1 and 1/2 pound of ground turkey 1 small ...

Thanksgiving 2009 : Deep-Fried Turkey

Last year, it was herb-roasted turkey. This year, Hubs cooked our 23-pound turkey outside via the deep-fried method. He first injected it with garlic-butter flavoring, then deep-fried it in peanut oil. It cooked faster than anticipated. Less than 2 hours I think. Click thumbnails to enlarge. The other side of the pot was obviously hotter than the other side. The black part ...
