It’s almost Super Bowl Sunday folks. I couldn’t care less which teams are playing against each other, HeHe! We’re a Baseball family(Yankees Baby!). However, I do like the Super Bowl half-time show and of course the million-dollar funded commercials. Some are funny some are, ehhhhh. But most of them are clever and hilarious. That’s what I’m looking forward to. Plus the super bowl party food :) .

The best things to make for parties like Superbowl are appetizers and finger foods. You can easily buy prepared-stuff from grocery stores but if you’re like me, you prefer making things at home.

Corned Beef & Potatoes Roll

I had such a craving for corned beef & potatoes earlier last week. When I said corned beef, I don’t mean the corned beef brisket cooked in crock pot for hours with whole potatoes and cabbage to serve as the main entree during Irish Day. Although after typing all that I’m certainly craving that right now, Hah! Anyhooo, I’m talking about the corned beef in can, like the Libby’s kind, sauteed in a little bit of oil, with tomatoes, and small potato cubes. Give me a bowl of that with rice and I’m good for the day.

I bought all the stuff I needed but then I figured since I love eating the sauteed corned beef with rice anyway, why not turn it into sushi rolls? That would be something new to blog about for sure. My husband thought it was weird. My son thought it was cool. I kept saying it’s something new. My husband was right. the corned beef & potatoes rolls were weird. I mean they’re edible and we ate them but I was missing the seafood flavor of sushi rolls.

This is pretty much a learning curve. I’m posting the recipe here which in all honesty is really easy to figure out just with what I’ve already written about it, just to show you how I made the rolls. Perhaps, you want to try to make them so you can decide for yourselves.

Happy International Sushi Day!

Apparently, it’s International Sushi Day today, June 18th. There’s a special day for everything and I usually roll my eyes on some of these special days but not on International Sushi Day. As far as I’m concerned, it should be sushi day everyday. But then again, it wouldn’t be so special if it’s celebrated that way, right?

Anyhooo, I have a few homemade sushi rolls recipes in the archives so I figured they should be the stars today. Them sushis deserve it. The pictures above are the very fresh and oh-so-good sushi packs we’ve gotten from the Army commissary in Goldsboro. These days we get our sushi fix at either Hibachi restaurants or my own kitchen. Give me a pack of nori wrappers and I’d be glad to show you how it’s done. Well, I can start now….

I have been craving sushi something terrible so I made some crab rolls this past Sunday. I made 2 kinds, crab with cucumber and crab with avocado. I even took out one of the sushi mats from my sushi making kit just to enjoy the experience of making sushi again. My son and I surely enjoyed the homemade sushi rolls for lunch.
