We’ve been boiling up California Blend a lot as a side dish for our dinners. I prefer fresh veggies but I admit the frozen mixed veggies are very convenient since they’ve already been cut and steams really fast. Still though, I make sure we eat more fresh veggies than frozen ones so I buy ‘em fresh then cut what I need each time. The fresh vegetables are also much better in stir-fry dishes. This Ground Beef With Zucchini & Broccoli Stir-Fry dish is a simple and very easy stir-fry to whip up on busy days or around here, rainy days. After a terrible heat wave, we’ve been having much needed rain and sometimes accompanied by and angry roar of thunder. These are the times when I enjoy just putting stuff together with whatever I have in the fridge. This is also the time when I only have a few items on the fridge before I go grocery chopping again. On the day I made this, I had 1 zucchini left, 2 heads of broccoli florets, 1/2 of onion, and few cloves of garlic. I decided to use ground beef instead of the usual beef steak meat just for a change.

My husband spent a year in Korea a few years back through his career in the Army. He would always tell me stories about the food that he tasted while over there. One of the most famous food Korea is known for is kimchi. They have all sorts of kimichi dishes there in Korea. Kimchi is not just eaten as a side dish. Sometimes people would incorporate kimchi into meat items to create a dish out of it.

One in particular is the pork and kimchi combination. I did my own version and wished for the best. I was afraid it was going to be so hot and spicy that we wouldn’t be able to eat the dish but my version turned out ok.

Beef, Green Peppers & Mushrooms Stir-Fry

So after I soaked the salty Wal-Mart steaks, I made a stir-fry out of them. Not to toot my own horn.. hmmm, yes I am.. it turned out pretty good. The green peppers added freshness and the soaking process pretty much removed any salty flavor from the meat so the soy sauce seasoning was not a problem at all.

Spicy Shrimp And Vegetables Stir-Fry

Shrimp Spinach & Zucchini Stir-fry

This is a simple seafood stir-fry using a bag of frozen shrimp. The $5 bag from Wal-Mart.

  • 1 pack frozen shrimp
  • medium onion, finely chopped
