If you are like me who likes whole tilapia, a place to find them is at Wal-Mart. The store sells frozen whole tilapias for about $7. Depending on the size of the fish a bag has 3 or 4 whole tilapias in it. The tilapias are completely cleaned, meaning they’re gutted and scaled. Each fish come in an individual vacuum packed bag so you can take out what you only need for either frying, steaming, grilling or baking.

I actually baked 2 whole tlapias when I made this dish but only arranged the bigger fish for the picture. So for this recipe take out 2 tilapias to thaw out before cooking.

Sweet & Sour Bass W/ Couscous

My husband went fishing with his brother last Saturday and caught this 5 pounds 21 inches bass, along with a crappie. Naturally, I have to cook the beautiful fish. I told him to gut it before  storing in the fridge then then I’ll scale it before cooking the following day. My husband was actually expecting me to just season the whole bass with lemon pepper and a little bit of oil then bake it in the oven. I made sweet and sour bass steaks for lunch instead.

Shrimp Tofu & Asparagus Stir-Fry was tonight’s dinner. I am happy to share that I am writing about it with a full and extremely satisfied tummy. Shrimp anything is really good, PERIOD! Fish & Chips With Creamy Creole Dip

I have been on a French Fries kick lately. It started on the 3rd when we went to Goldsboro to shop for books at Books-A-Million, then I stopped at the Filipino store to grab some supplies for my pantry, and my husband went to a fishing store to get whatever he needs for fishing. We ate lunch at the Cook-Out and I really loved the french fries that came with my bbq pork plate lunch. Then that night, my sister-in-law invited me to a dinner party for her friend who’s getting married. I picked french fries to go with my reuben sandwich, and I enjoyed those too. The sandwich was huge though so I saved the half for my husband and some fries that my daughter ate up on our drive home. My son stayed at my sister-in-law’s house for a sleepover with his cousins.

Anyhoooooooo, I was still craving for some fries a few days after that so I made some to go along with the deep-fried fish for this fish & chips dinner. The thing is, as much as I would love to eat up those McDonald’s french fries, we’ve been staying away from fast food so we haven’t visited any at all. It’s ok coz homemade fries are very good too and so easy to make.

Catfish Steaks, Bistek Style

My husband is really into fishing so I’m guessing I’ll be posting catfish recipes here once or twice a month. Maybe even 3 times a month. I usually make the catfish nuggets for lunch which the family loves the day after his many fishing expeditions. Other catfish dishes that the family likes are Catfish Fillets In Creamy Coconut Milk Sauce, Catfish Spaghetti W/ Garlic-Tomato-Scallions Sauce, and catfish fillets pan-fried in butter. Sometimes my husband would save a fish for me to do whatever I want with it. These are the fishes where he leaves the skin and sometimes head, in tact. Earlier this month, he reserved one catfish (decent size), cut into steaks for me to cook however I want for my lunch.

I decided to cook it bistek style. Bistek is basically thin slices of beef marinated in soy sauce, lemon juice, and garlic sauce then cooked in oil with onions. You can do this with pork too. With the catfish steaks though, I eliminated the marinating process. Nevertheless, the fish absorbed the bistek flavors just fine.

Catfish In Creamy Coconut Milk Sauce (Ginataang Hito), Part 2

The reason I’m posting a part 2 of the Catfish Fillets In Creamy Coconut Milk Sauce (Ginataang Hito) dish is because my husband specifically got this catfish for me to do whatever. Compare to the size(huge) of the other fish he caught last night, he could’ve easily thrown this one back into the water. He kept it instead coz he thought I’d be able to do something with it for my lunch consumption. Then he gutted it for me. He didn’t take the head off or skinned it either coz he figured I’d prefer the fish to have a head and the skin. He was right.

What exactly is a Scampi? According to Seaffod Experts website;

Scampi is a type of lobster and is one of the world’s finest delicacies. There are, however, other species frequently referred to as scampi. For example, in the Midwest region of the US freshwater shrimp (Macrobrachium Rosenbergii) are referred to as scampi. So again, what exactly is scampi?

Is scampi a crawfish? Is scampi a crayfish? No, scampi are small clawed lobsters that unfortunately look a little bit like a crawfish. But they definitely shouldn’t be confused with the freshwater crawfish, which is primarily from the Gulf of Mexico and China. Crayfish is another name used for spiny lobster, and if that’s not confusing enough, in the southern US crawfish is called crayfish!.

According to Scapi and Chips;

“Scampi” is actually the tail of the “Nephrops Norvegicus” which is more commonly known as the Norway Lobster, Dublin Bay Prawn (although its not a prawn!) or langoustine. According to Wikipedia, the Nephrops Norvegicus is an orange pink lobster that grows up to 25cm in length and is typically found in the North East Atlantic, the North Sea and parts of the Med.

In short, Scampi is not how the dish is cooked, it’s actually a small clawed lobster that looks like a crayfish. But I bet you when you hear the word scampi you’d think of shrimps cooked in butter, white wine, lemon juice, with some sort of pasta, either spaghetti, linguine, or fettuccine noodles. Now that you know what a Scampi really is coz it certainly doesn’t hurt to know food trivia sometimes, let’s cook shrimp scampi with fettuccine coz that’s what we’re familiar with.

Shrimp & Veggies Sotanghon Curry

In technical term(I think), sotanghon noodles are cellophane noodles. I actually prefer sotanghon noodles over the rice or bihon noddles that’s used in Pancit dishes. It’s a childhood thing that I can’t really explain. Since I’ve turned into a curry fiend back in February, starting with a Curry Pork & Green Beans Stir-Fry, then the pork & tofu stir-fry, grilled curry pork chops, grilled bbq-curry chicken, curry pork & potatoes w/ saffron, chicken wings curry, and other curry dishes, I decided to add a curry flavor in this shrimp & sotanghon noodles dish too. I think I’ll make it again soon.
