This Ground Beef With Zucchini & Broccoli Stir-Fry dish is a simple and very easy stir-fry to whip up on busy days or around here, rainy days. After a terrible heat wave, we’ve been having much needed rain and sometimes accompanied by and angry roar of thunder. These are the times when I enjoy just putting stuff together with whatever I have in the fridge. This is also the time when I only have a few items on the fridge before I go grocery chopping again. On the day I made this, I had 1 zucchini left, 2 heads of broccoli florets, 1/2 of onion, and few cloves of garlic. I decided to use ground beef instead of the usual beef steak meat just for a change.

Here’s the shrimp and veggies stir-fry that went with the cabbage-mushroom lumpiang shanghai that I made for our Super Bowl Dinner. Nothing extravagant here. Just a simple shrimp stir-fry dish with baby carrots, broccoli florets, and napa cabbage. That’s the joy in making stir-fry dishes. You can toss anything you want in it, either with pork, chicken or beef, or shrimp, or what other protein you want of course.

Pork Green Beans and Eggplant Curry Stir-Fry

The original plan was to make a zucchini and yellow squash stir-fry but then I saw the eggplants and since I really didn’t have a concrete dish that I wanted to make it with I decided to cook ‘em with green beans instead. I figured I’d let my son taste eggplants since he’d never had any at all. The verdict? Well, the dinner went fine. No major fight occurred to eat his vegetables so that was a good sign. My husband is not that fond of eggplants but he ate his share. I’m from the Philippines so I have no problem eating eggplants. I knew it wasn’t going to be a hit anyway so I didn’t expect rave reviews. I was just glad they ate their dinner.

Beef, Green Peppers & Mushrooms Stir-Fry

So after I soaked the salty Wal-Mart steaks, I made a stir-fry out of them. Not to toot my own horn.. hmmm, yes I am.. it turned out pretty good. The green peppers added freshness and the soaking process pretty much removed any salty flavor from the meat so the soy sauce seasoning was not a problem at all.
