The best time to make this is when you’re grilling something so you can double-grill and save time in cooking. That makes sense, right?
Buttered Potato Duo Hash
I had 1 sweet potato left after I made the sweet potato chips so I decided to make the easy peasy sweet potato hash as a side dish to pan-fried white fish. But then I saw the red skin potatoes then I thought, “hmmm, what would happen if I combined sweet potatoes with red skin potatoes?” What happen was, I came up with a delicious potato hash side dish that’s worth repeating over and over and over and over again.

I’ve been trying to eat more salad these past few months as part of my healthy diet. I actually do love salads and when I opt for a bowl for dinner, I make sure I still add a bit of protein in it. Like when we had London Broil. While everyone ate the steak as is with a couple of side dishes, I sliced my share then added ‘em in a bed of organic mixed greens then drizzled light raspberry vinaigrette all around. It was sooo good. It helps when the steak is perfectly cooked.
Sweet Potato Chips
I saw the sweet potatoes at the grocery store the other day and they just made me crave for sweet potato chips. I dunno why but that’s exactly what I thought about a soon as I saw them. The last time I had anything with sweet potatoes was Thanksgiving of last year when I made sweet potato pies and sweet potato muffins so I figured I’m due for a sweet potato fix.
Avocado Cucumber & Tomato Salad W/ Cilantro
Last Saturday, our neighbor Miss Peggy gave us a bag of frozen pork bbq. It’s basically the southern shredded pork bbq that she stored in the freezer for future consumption and she was so nice to share some with us. All I had to do was thaw ‘em out and season for an added flavor.
After thawing, I seasoned the pork with a little bit of oil, apple cider vinegar, red wine vinegar, Worcestershire sauce, garlic powder, salt, pepper and a little bit of red pepper flakes. Then I made a this Avocado Cucumber & Tomato Salad W/ Cilantro salad to serve on the side.
Cilantro Rice Pilaf
Cilantro Rice Pilaf is the side dish I made to accompany the Mexican Lasagna I cooked for Cinco de Mayo. Usually, I’d make cilantro rice on the dry side by cooking it as a fried rice. Meaning I’d cook the rice first in my rice cooker then sauté it with garlic, onions, salt and pepper then generously garnish it with coarsely chopped cilantro. This time around, I went the pilaf way. It’s almost on the runny and wet consistency.

Stuffed Tortellini & Broccoli Slaw Pasta Salad W/ Raspberry Vinaigrette
Cold pasta salads are good side dishes with grilled meat dishes during these Spring warm days which of course extend all the way to Summer season. This Stuffed Tortellini & Broccoli Slaw Pasta Salad W/ Raspberry Vinaigrette is similar to the Corabella 4-Cheese Tortelloni & Broccoli Florets Cold Salad and Tricolor Rotini & Broccoli Salad W/ Golden Raisins and Sunflower Seeds. In the two aforementioned pasta salads, I used Italian Salad dressing. This time around, I used raspberry vinaigrette dressing that I was so happy to find at the store just the other day.
And of course, this is another simple dish for the Corabella cheese-stuffed pasta that are just so handy for any day.
Cheesy and Creamy Cauliflower Gratin

I was craving for homemade biscuits to go with the fried chicken I made this past Tuesday but I realized at the last minute that used the last bit of flour I had for drenching the chicken. So I decided at the last minute to finally do something with the head of cauliflower. Gratin seemed to be the easiest and fastest way to cook it.
Kraft New Homestyle Mac ‘N’ Cheese

I’m pretty capable of making macaroni and cheese from scratch like Creamy Mac ‘N’ Cheese W/ Crispy Bacon Bits but my husband saw this new Kraft New Homestyle Mac ‘N’ Cheese (Old World Italian with Parmesan & Romano cheese sauce) so he grabbed it to try. There was also a coupon from Food Lion so it only cost $1.
It’s very easy to make. Just follow the instructions from the package which comes with the macaroni and packets of cheese sauce, seasoning and bread crumbs topping. You still need butter, milk, and water for boiling the pasta.
