Catfish Fillets In Creamy Coconut Milk Sauce (Ginataang Hito)
I had 9 full ziploc bags of catfish in my freezer after my husband’s fishing trip last Thursday. So far I’ve made creole catfish nuggets out of the stomach fillets. The other night I cooked up another bag of the fillets by simmering the fish in coconut milk. It was soooo good. Anything simmered in coconut milk always turns out well, right? This Catfish Fillets In Creamy Coconut Milk Sauce is not an exception.
Eye Candy : Lindor Truffles
The second I clicked the “post” button on Ces’ comment box letting her know I couldn’t join the new theme for LaPiS (Lasang Pinoy Sundays), I realized I actually do have something I could enter. The theme this week is Eye Candy. For days I thought I didn’t have anything to add to the round-up until just a couple of hours ago. I remember the pictures of the Lindor Truffles I took when we first got our Nikon D40. My husband likes to surprise me with a bag (or 2) of Lindor Truffles once in a while. He actually bought 2 different bags to fill my Trifle bowl with lots of chocolate goodies last Christmas. The dark chocolate, and white chocolate. The ones on the picture is milk chocolate truffles.
So there you go. My Eye Candy entry for LaPiS. I’m glad I have these saved in my folders.

LaPiS #6 : Creamy : Chicken Fettuccini Alfredo
This week’s LaPiS theme is CREAMY. I made this chicken fettuccini alfredo dish a few nights ago but I thought I’d wait to post it for this Sunday’s theme. Talk about Creamy goodness full of carbohydrates…LOL. Hey, there’s protein in the chicken, right?
Step by step process will be posted tomorrow or sometime next week. I’m tired and I just want to lay down in the couch, flip on the September issue of VOGUE while I watch Iron Chef America. It’s salmon dishes between Bobby Flay and Check Boucher. CIAO!

LaPiS # 5 : Breakfast | 1st Day Of School
The new theme for LaPiS is Breakfast. I wasn’t able to participate in the 2 previous ones coz either I couldn’t think of a picture or I just didn’t have time. The past 2 weeks have been too busy for me. Well, today is the first day of school. I don’t usually cook breakfast during the week (cereals, anyone?). Weekends is when the whole family all sit down in the dining table and enjoy our traditional full plate of breakfast that Mommy (that’s me) prepares. We go all out during the weekends with eggs (sunny side up or scrambled), bacon/sausage, ‘taters or toast. Sometimes we have pancakes. I get creative by adding either chocolate chips, blueberries or strawberries. That’s a family tradition in out house.
But, today is the 1st day of School. My son is embarking on 5th grade. I figured it wouldn’t hurt to act like the Best Mommy in the World by cooking him our traditional weekend breakfast. Eggs, Beef Bacon and Wheat toast w/ butter. Hmmm, beef bacon? Yup, my husband saw it at the commissary and thought we’d try it. After cooking a few strips this morning I told Hubs if he ever thinks about buying it again, I’ll kick his behind. The beef bacon is just not pork bacon. Well duhhh??. Pork bacon can get crispy, not the beef. It’s like salty thin strips of smoked beef. I don’t like it. I want my REAL bacon back.
