Mojito Pork Satay
I’ve used Mojito in london broil, chicken, and flank steak but never in pork which is quite a surprise coz I prefer pork over any of other meat. I finally had the chance to introduce Mojito to pork a couple of days ago via these pork satay. I used 1 bottle of the 2 Bacardi Mojito bottles left from a 6-pack that I bought last weekend.
Cooking with Mojito had always given me great results so I didn’t feel like I wasted my drink at all. But I was tempted to chug that bottle for sure, haha.
Braised Chicken In Raspberry Vinaigrette W/ Broccoli
I have this affinity for incorporating salad dressing in some dishes. I love the tangy Italian dressing added in bbq sauce which I’ve used with chicken and ribs. In this particular dish, I decided to use whatever I have left of my new favorite salad dressing, light raspberry vinaigrette that I bought at Wal-Mart a couple of weeks ago. I’ve used it in the Stuffed Tortellini & Broccoli Slaw Pasta Salad W/ Raspberry Vinaigrette and my salads a lot so it disappeared fast. I’ll have to buy a new bottle the next time I go grocery shopping.
Anyhooo, this recipe is so easy and it doesn’t require that much prep or ingredients.
Avocado Cucumber & Tomato Salad W/ Cilantro
Last Saturday, our neighbor Miss Peggy gave us a bag of frozen pork bbq. It’s basically the southern shredded pork bbq that she stored in the freezer for future consumption and she was so nice to share some with us. All I had to do was thaw ‘em out and season for an added flavor.
After thawing, I seasoned the pork with a little bit of oil, apple cider vinegar, red wine vinegar, Worcestershire sauce, garlic powder, salt, pepper and a little bit of red pepper flakes. Then I made a this Avocado Cucumber & Tomato Salad W/ Cilantro salad to serve on the side.
Curry Pork & Potatoes W/ Saffron
I just realized that I became a Curry fiend back in February. I made Curry Pork Tofu and Bok Choy, followed up by Curry Pork & Green Beans Stir-Fry, then the Grilled Curry Pork Chops, and Curry Chicken Wings. I actually have a video of the curry chicken wings and I haven’t had time to edit it so I’d post that some other time. Since it’s grilling season, I’ve actually made Grilled BBQ-Curry Chicken early this month of May.
This Curry Pork & Potatoes W/ Saffron was made back in April and I’m just posting it now because I had to space out all the curry recipes to avoid giving the impression that my whole body is on fire from all that curry lovin’.. Haha! Well, it’s not and here is the recipe now.
Baked Spaghetti Alfredo W/ Mushrooms & Capers
For lack of a better chefy-gourmet-ish word, this Baked Spaghetti Alfredo W/ Mushrooms & Capers is what you call the white version of Baked Spaghetti W/ Mushrooms. White, of course comes from the Alfredo sauce and Mozzarella cheese, instead of the usual tomato based spaghetti sauce and shredded cheddar cheese. And to add another twist, I threw in some capers which in my opinion work really well with Alfredo sauce.
Grilled BBQ-Curry Chicken
I had a craving for that bbq char flavor last weekend so I decided to grill up some chicken thighs and legs except I realized that I didn’t have a bottle of BBQ sauce. No biggie, coz I have ketchup, vinegar and brown sugar. Those 3 ingredients are the base of a bbq sauce and you could pretty much add whatever else you want to create a flavorful bbq sauce that you’d be so proud of.
Cilantro Rice Pilaf
Cilantro Rice Pilaf is the side dish I made to accompany the Mexican Lasagna I cooked for Cinco de Mayo. Usually, I’d make cilantro rice on the dry side by cooking it as a fried rice. Meaning I’d cook the rice first in my rice cooker then sauté it with garlic, onions, salt and pepper then generously garnish it with coarsely chopped cilantro. This time around, I went the pilaf way. It’s almost on the runny and wet consistency.

Mexican Lasagna
The original plan was just the regular tacos but after browning the ground beef then combining it with the refried beans I decided to turn tacos into Mexican Lasagna. I thought I should really create other Mexican dishes to add into the Mexican category here at Feistycook. Thankfully with Mexican dishes, I noticed that take out or add an ingredient or two, you’d still have the same base ingredients yet come up with totally different dishes. I guess it depends on how you cook a dish.

I had an impromptu thought if making a Strawberry Banana & Vanilla Yogurt Smoothie as an after-school snack for my son. It was soooo cute how my daughter opened the fridge to show her big brother what was waiting for him inside.
