Rotisserie Chicken Eggs & Cheese Sandwich

Food Lion had a buy-one-get-one-free sale on their rotisserie chicken that other day. They were cooking the new batches for the end of the day so the chicken that were cooked earlier in the day had to be put in the cold area to preserve and sell. We were actually going to wait a few more minutes for the new batches but the salesclerk said the already cooked yet cold chicken are on sale. BOGO she said so I was like yah know, That’s $5.99 for 2 whole Rotisserie Chicken. I could easily warm it up in the oven or in the microwave.

As soon as we got home, I turned the oven on to warm up the bbq flavored whole chicken while I put the groceries away. Let me just say that we tore that up for dinner. Poor chicken didn’t see it coming. The next day, I decided to use a portion of the other whole chicken(the free one) to make a filling for a hearty sandwich.

$13 Worth Of Goodies From My Local Produce Vendor

Before going grocery shopping today, we decided to jinx the veggies from the store and just buy some from the local produce vendor that’s situated in the circle plaza of where we live. I knew the veggies would be much cheaper but I didn’t expect to only spend $13 for all the stuff I bought. Actually, it’s $12.50 but my husband told the vendor to keep the change.

Twisted Cinnamon Bread W/ Glaze

From the time I’ve learned how to make cinnamon rolls from The Pioneer Woman, I’ve made it quite a few times. Believe it or not, it’s really so easy to make. However, I do understand that the The Pioneer Woman’s dough could get overwhelming for a newbie cinnamon roll baker. The last rolls I’ve made, I actually used the dough recipe from the baked pork bbq buns and siopao which I’ve adapted from Connie of Home Cooking Rocks.

The night before Father’s Day, I decided to make cinnamon rolls for us to enjoy the following morning. But I decided to put a twist on it, literally. Yup, I twisted the cinnamon roll, hence it’s called twisted cinnamon bread.

I had a little bit of leftover of the Kraft Honey Mustard barbecue sauce that I used with pork chops a few days ago so I decided to use ‘em all up with the chicken. I pretty much just used adobo as the basis of how I made this Honey Mustard Chicken & Red Potatoes. While adobo is a balance of salty and sour, this chicken dish is sweet and tangy.

Braised Veal Chops

I was inspired when I made this braised veal chops dish. As soon as I decided to cook the veal chops this way, I envisioned tenderly cooked veal with a delicious simmered wine sauce on top of yummy yummy red skinned mashed potatoes. It was definitely food orgasm.

But then I realized, I only had white wine. The recipes I found online used red wine which I believe would actually complement the veal chops nicely. After pacing a bit trying to decide whether I should proceed using white wine, I figured, why not? It’s not like some food connoisseur was going to suddenly appear in my kitchen then hit my hands with a wand for using white wine instead of red, right? And if that ever happens, I’d probably hit that person with the wine bottle for scaring the bejeezus out of me. Just saying……

Salads With Steaks

I’ve been trying to eat more salad these past few months as part of my healthy diet. I actually do love salads and when I opt for a bowl for dinner, I make sure I still add a bit of protein in it. Like when we had London Broil. While everyone ate the steak as is with a couple of side dishes, I sliced my share then added ‘em in a bed of organic mixed greens then drizzled light raspberry vinaigrette all around. It was sooo good. It helps when the steak is perfectly cooked.

Easy Salmon Melts

These salmon melts are sooooo easy and fast to make you don’t even actually have to refer to this recipe. You can get so creative with your own version after reading this one. Coz that’s excatly what I did after reading The Pioneer Woman’s tuna melts recipe. YUP, these salmon melts were inspired by TPW’s tuna melts.

I quickly made this after talking to my husband on the phone who was on his way home with our son from a few hours of Fishing. He asked what’s for lunch and I suggested salad since that’s what I was shoving in my mouth in between talking to him and salad was the fastest thing I could serve at that moment. But I figured I’d be nice and make something more substantial for them coz they were hungry. When I said I could make salmon melts which are like similar to tuna melts he said they better be ready in 10 minutes. Easy Peasy!
