Baked Chicken In Brooks House Of BBQ Chicken Sauce Marinade
My dear mother-in-law gave me 2 bottles of Brooks House Of BBQ sauces and marinades when we visited them for the Christmas holidays last month. I used the chicken sauce to marinate 3 chicken quarters the other night. I baked the chicken in the oven then served them with peas and butter-herb potatoes. You can grill the marinated chicken too as well but since it’s winter season and it’s kinda frigid outside, baking was a much better option. The chicken turned out tangy and slightly peppery coz the marinade contains oil, apple cider vinegar and seasonings of sage, thyme, and pepper.

- 1 1/2 cup of Brooks BBQ Chicken Sauce
- 3 chicken leg quarters
- 1 large ziploc bag or marinating bowl
- Place the chicken pieces in a large ziploc bag or marinating bowl. Pour the sauce into the bag/bowl. Lock the bag or close the bowl tightly then shake or move the bowl a bit to coat the chicken pieces. Store it in the fridge to marinate for 2-3 hours.
- Preheat the oven to 365°.
- Transfer the chicken into a sheet pan. Bake the chicken for 40 to 45 minutes.
- Serve with peas and butter-herb potatoes.
A Surprise Chinese Take-Out For Lunch
The husband and the son went to Auto Zone today to get something done with the car. The daughter and I did our thing around the neighborhood by going for a walk and taking pictures of the trees and leaves. I wanted pictures of this year’s Fall foliage. I will post those in my other blog sometime tomorrow. As she and I were turning around at the end of the very long road, I saw our car driving towards the house so I told my daughter we had to hurry home coz I knew they’d be looking for us. Lo and Behold, a few minutes later Daddy was at the end of the driveway waiting for us. We had a long way to go so the husband went back to the house, I’m assuming, then went back to the end of the driveway to check on us again, Hehe. I guess we were walking too slow and enjoying the wind far too much. Once we finally reached the house, my husband asked what I was thinking of making for lunch. I didn’t really know and haven’t thought about it at all. I actually haven’t eaten anything at all at that time. The little girl had a bowl of Reese’s Puff cereal for breakfast and I made her grilled cheese sandwich before we went for our walk.
Dinner @ Two Dogs Pizza
Two Dogs Pizza is the only local owned pizza place where we live. Tonight was the second time we’ve eaten at the place in the year and 2 weeks that we’ve lived in this area. It’s a pretty decent sized local pizza restaurant with a buffet but we’ve discovered tonight only lasts until 2pm. The first time we went there last year we thought the prices were kinda high and the pizzas, although not that bad, are nothing extraordinary. Which explains why in a year and two weeks that we’ve been here, this is the only second time we’ve gone back.
Tonight we ordered from the menu since the buffet(salad and pizzas) was done. We ordered a large Bulldog Bonanza which has sausage, bacon, ham, pepperoni and cheese toppings. We also got a free order of bread sticks.

My husband discovered Hardee’s $5 Big Box Lunch yesterday. We like Hardee’s and we’ve eaten from their menu from time to time but I really didn’t know how long they’ve had this Big Box Lunch deal going on. So I Googled. BurgerBusiness.com wrote about it back in January so I guess it’s been around for a while this year.

Under $20 Goodies From The Local Farmer Vendor
The last time I went to the local farmer vendor I only spent $13. This weekend I spent $16.50 but that’s only because of the jar of apple butter. If it wasn’t for that I would’ve just paid $11. Nevertheless, under $20 for the whole thing is still a very good deal. I also didn’t mind paying $5.50 on a jar of apple butter because it’s all natural unlike the branded versions sold in grocery stores.
Rotisserie Chicken Eggs & Cheese Sandwich
Food Lion had a buy-one-get-one-free sale on their rotisserie chicken that other day. They were cooking the new batches for the end of the day so the chicken that were cooked earlier in the day had to be put in the cold area to preserve and sell. We were actually going to wait a few more minutes for the new batches but the salesclerk said the already cooked yet cold chicken are on sale. BOGO she said so I was like yah know, That’s $5.99 for 2 whole Rotisserie Chicken. I could easily warm it up in the oven or in the microwave.
As soon as we got home, I turned the oven on to warm up the bbq flavored whole chicken while I put the groceries away. Let me just say that we tore that up for dinner. Poor chicken didn’t see it coming. The next day, I decided to use a portion of the other whole chicken(the free one) to make a filling for a hearty sandwich.
$13 Worth Of Goodies From My Local Produce Vendor
Before going grocery shopping today, we decided to jinx the veggies from the store and just buy some from the local produce vendor that’s situated in the circle plaza of where we live. I knew the veggies would be much cheaper but I didn’t expect to only spend $13 for all the stuff I bought. Actually, it’s $12.50 but my husband told the vendor to keep the change.
