When I’m finishing up the last groceries in the fridge I usually make tacos out of meat or leftover veggies. Like these Beef Green Pepper Corn & Eggs Tacos. I had 2 pieces of thin steaks, 1 green pepper, and a little bit of leftover corn from a side dish some other night. Baked Ravioli With Leftover Meat Sauce & Ricotta Cheese

When I make spaghetti meat sauce for a spaghetti dinner I always end up with more sauce than the noodles. Throughout the years I’ve always been making too much spaghetti that gives us leftovers for 2-3 days worth of lunch. Fortunately, I have learned to save spaghetti sauce for other pasta dishes for future dinners. Sometimes I just ladle them into a jar then store that in the fridge to use a few days later. For longer storage, it’s best to store the extra sauce in a ziploc bag, then into the freezer.

So to use up a bag of frozen spaghetti meat sauce, I decided to use it with Corabella’s Mezzaluna 4-Cheese Ravioli. To make the dish more exciting and filling, I also added ricotta cheese and shredded cheese before baking in the oven. This Baked Ravioli With Meat Sauce & Ricotta Cheese is almost like the Baked Potato Gnocchi W/ Spinach & Ricotta Cheese without the spinach.

Ever since I got the box of new batch of Corabella pasta products I have been itching to make something with the potato gnocchi. I could’ve made the Baked Potato Gnocchi W/ Spinach & Ricotta Cheese right away but I’m going to reserve that recipe for some other time. I want to make something new to present here in the foodblog. The new recipe presented itself the day after we had lemon chicken. There were 4 small slices left of the lemon chicken which I know would stay in the fridge for a week coz we’re all going to be too shy to touch them. I figured chopping the chicken up in small pieces will make a substantial winner when combined with the starchy potato gnocchi. A garlic infused butter sauce with capers just sounded so delicious so I decided to make that too.

Chicken & Tomatoes Parmesan Pizza

The last time I made bread, I reserved 1/3 of the dough to make this chicken and tomatoes Parmesan pizza. The process of making homemade pizza is really not as hard as you would think. Once you get the hang of making the dough yourself, the sky is the limit in toppings. For this pizza, I just shredded 1 leftover ala Max’s fried chicken. You can use whatever leftover chicken you have in your fridge. How easy is it to slice tomatoes then just season them with Italian seasoning after drizzling olive oil in them? Very easy for sure. Just to add another cheese element besides the shredded cheddar cheese, I sprinkled grated Parmesan cheese on top as well.

This chicken and pasta salad would be a nice pasta salad to make use of whatever leftover chicken you’ve got in the fridge. I actually “made” this fruit salad very early on this month but I neglected to post it here since I already posted it in my Facebook and Twitter. I got so excited to show off what a beautiful fruit salad I “made” that I forgot where it was intended for. Anyhoo, I said “made” coz there’s really no making process that went on. All I did was buy watermelon, grapes and strawberries, cut the watermelon in half, then scooped out cute rounded balls. I tossed them with sliced strawberries and whole grapes. Leftover Chicken, Salsa, & Green Onions Quesadilla

Besides fried rice, soup, or frittata, quesadilla is what I make to use up leftover meats. Just chopped up the meat, tomatoes, and green onions, then throw ‘em on top of a flour tortilla, then bind everything together with shredded cheese on top, and another flour tortilla to finish it. In this quesadilla, I used the leftover southwestern chicken and salsa instead of fresh tomatoes. This is perfect for quick lunch or those weekend munchies with the family. Ramen Noodles W/ Pork & Fried Egg

When my husband was off last Thursday, he asked for a substantial lunch that would really fill him up while he did his school homework. I suggested ramen noodles but he didn’t think it would be enough so I suggested pork chops next. He agreed, so I defrosted 4 pork chops quickly in the microwave, preheated the oven, threw the chops in a sheet pan, brushed them with bottled Caribbean Jerk marinade, then broiled them in the oven, 8 minutes on each side.

I served the pork chops with leftover mashed potatoes. I cooked 4 and we only ate 1 each so I had 2 pork chops left to eat whenever or do whatever sometime. By 4pm, I was wracking my brain what to make for dinner and I had to cook fast coz my husband had to go to school by 5:30pm. So I said, ramen noodles. And he said, “finnnnnnnne, make your ramen noodles.” Hahahaha! And I did. And I added the leftover pork chops, fried egg, and chopped cilantro in it too. So see, this ain’t your regular ramen noodles in a bowl coz when I make ramen noodles, I make it GOOD with all the fixin’.

INGREDIENTS
  • 4 packs of ramen noodles (pick a flavor)
  • 6-7 cups of water
  • chop up leftover pork chops in cubes
  • 3 springs of scallions, chopped finely
  • sprinkle of garlic powder
  • 3 springs of cilantro, roughly chopped
  • 4 eggs
  • some oil
  • sprinkle of shredded cheddar cheese
INSTRUCTIONS
  1. Boil water for the ramen noodles. Cook according to package.
  2. Fry the eggs individually or 2 at a time in a little bit of oil. Set them aside.
  3. In a pan, heat up oil. Sautee chopped scallions or chopped up leftover pork for 3 minutes. Season a sprinkle of salt and pepper, and garlic powder. Set aside.
  4. Assemble the ramen noodles in individual bowls. Ladle ramen noodles into a bowl, top with the sauteed leftover pork and scallions, an egg, then sprinkle with chopped cilantro. Sprinkle with shredded cheddar cheese too if you want. That was my husband’s idea for an added garnish.
NOTES

Use whatever leftover meat you have. Poach the eggs instead of frying.
