Chocolate Banana Cupcakes W/ Cream Cheese Frosting
Before the bananas in my freezer go bad, I decided to make cupcakes out of ‘em. I wanted something chocolate too so I made chocolate banana cupcakes with cream cheese frosting and for an added cuteness, my daughter decorated the cupcakes with chocolate sprinkles on top. The cupcakes turned out moist and delicious.

- 4 ripe bananas, mashed
- 1 egg
- 1/2 cup warm water
- 1/4 cup milk
- 1/4 cup oil
- 1 tsp vanilla
- 1 cup flour
- 3/4 cup sugar
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 brick cream cheese
- 1 stick of butter
- 2 1/2 cups confectionery sugar
- 1 tsp vanilla
- chocolate sprinkles
- 15 cupcake/muffin paper cups
- Preheat oven to 350°.
- In a bowl, stir sugar, flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- In a mixing bowl, beat egg, mashed bananas, water, milk, oil and vanilla until well-blended. Gradually add the dry mixture into the wet mixture while continuing to mix.
- Lined muffin pans with the paper cups. Pour in the batter into the cups, 3/4 full. Bake it the oven for 20 minutes or until a toothpick comes out clean when you stick it in the middle of the cupcake. Let the cupcakes cool completely before frosting.
- Beat together the butter, cream cheese, powdered sugar and vanilla. Frost the cooled cupcakes then decorate with chocolate sprinkles.
Mom’s White Zucchini Bread
I’ve made Zucchini Bread before but if you search for the recipe in the search box right now though, you won’t find any. It wasn’t all that bad really. I think it was just on the dry side and the glaze I drizzled on top didn’t look all that pretty in the pictures. That’s what I get for trying to be all fancy-schmancy in here. But thanks to my Mother-in-Law, I now have a zucchini bread recipe as of today, October 5th, 2011. My in-laws from New York were here for a visit last week and brought along delicious loaves of zucchini bread and banana bread. I ate 3 slices of the zucchini bread the first night we got it. I made sure to take pictures of it first of course so I could post the recipe as soon as I got it from her.
Peach Marmalade Cinnamon Rolls
Ever since I’ve learned how to make homemade cinnamon rolls from The Pioneer Woman, I’ve never looked back. It’s really not that hard to make. I whip up cinnamon rolls twice a month. I’ve made regular and chocolate chips kind on my first attempt. Then I made regular ones with cream cheese frosting last Christmas. Sometimes I even twist ‘em up with glaze. The other day, I added peach marmalade in the filling. I am definitely adding another reason why I love peach so much thanks to these peach marmalade cinnamon rolls. Let me show you how easy it is to make.

When The Pioneer Woman Ree Drummond advised her readers to make Pam Anderson’s flan with cream cheese, I obediently followed. And I am so glad I did coz O-M-G, this flan with cream cheese is absolutely DIVINE!
Twisted Cinnamon Bread W/ Glaze
From the time I’ve learned how to make cinnamon rolls from The Pioneer Woman, I’ve made it quite a few times. Believe it or not, it’s really so easy to make. However, I do understand that the The Pioneer Woman’s dough could get overwhelming for a newbie cinnamon roll baker. The last rolls I’ve made, I actually used the dough recipe from the baked pork bbq buns and siopao which I’ve adapted from Connie of Home Cooking Rocks.
The night before Father’s Day, I decided to make cinnamon rolls for us to enjoy the following morning. But I decided to put a twist on it, literally. Yup, I twisted the cinnamon roll, hence it’s called twisted cinnamon bread.
Monkey Bread

I’ve read about Monkey Bread before but never really tasted it until September last year when we moved to this new house. A neighbor gave us a bundt of Monkey Bread as a welcome gesture for being the new neighbors. That was really nice of her. She’d given the kids some goodies after that day too. Halloween and Christmas. I’m pretty sure she’ll give them something for Easter as well.
I had a sweet craving the other day, and I was really tired of the kids’ disappointed sigh every time they opened the cookie jar and it’s empty. Monkey Bread is really easy to make so I thought about it. It’s easy to make because most recipes call for tubes of biscuits. My dilemma was I didn’t have tubes of biscuits in my fridge. BUT, making biscuits dough is really not that hard. So, I googled for a monkey bread recipe that doesn’t use Pillsbury biscuit dough. Yup, I googled.
Peach Cupcakes W/ Cream Cheese Frosting

My daughter kept asking me yesterday to “make something.” She even brought out the cookie cutters. I didn’t feel like making sugar cookies, or any other kind of cookies. Not this week anyway. I was craving for a cupcake though. Something with a fruity base cake. I remembered the jar of peach preserves that I bought this weekend so I decided to go with that. And my cupcakes craving was resolved, deliciously!!
Banana Spice Cake W/ Blue Frosting

I’m still not sure if I should share the story behind this banana spice cake with blue frosting. It’s either good or bad, depending on how perfect you are as a parent. I’m not so you’ll probably pick bad.
I just can’t stand being judged…………………. Oh well, since I’ve already started, I might as well, right?
