Curry Pork Tofu and Bok Choy

I made this Curry Pork Tofu and Bok choy dish to go along with the leftover steak and peas fried rice. This was actually inspired by the curry pork and green beans dish I made for lunch early last week. I’ll post it some other time. I loved it so much I decided to make a slightly different version with tofu and bok choy.

Beef Hoisin Satay

The weather is perfect today. So appropriately perfect for a summer grill. It’s not as authentic as the real satay wherein turmeric powder is a must in traditional satay recipes to give it that yellow color. Let’s just call this Beef Satay ala Dexie.

INGREDIENTS:
beef tenderloin, cut in strips
10-15 skewers, soaked in water for 30 minutes before using
1 thumb of ginger, peeled and grated
3 cloves of garlic, minced
3/4 cup of soy sauce
juice of 1 lime
1/4 cup of hoisin sauce
sprinkle of black pepper
1 tsp of curry powder
sprinkle of red pepper flakes (optional)

In a bowl, combine soy sauce, lime juice, hoisin sauce, black pepper, curry powder, red pepper flakes, ginger, and garlic.

Put the strips of beef in either a container or ziploc bag. Pour over the marinade onto the meat. Gently work the meat and marinade together to coat. Cover the container. Store in the fridge and marinade overnight or 3-4 hours before grilling.

Skewer the marinated beef strips. Grill the meat, about 8-10 minutes (or longer) on each sides. It depends how thick you cut the beef strips.

I cut mine slightly thicker and skewered 3 pieces of meat on 1 skewer since I made this for dinner. It’s more filling this way.

KIMCHI AND CUTTLEFISH STIR-FRY

My husband and I love Kimchi. Having spent a year in Korea while serving in the Army back in 2003, my husband had tasted the best Kimchi. He said people there eat so much of it and they also have different dishes where kimchi is incorporated into the dish inself instead of just being on the side when meals are served. One particular dish he keeps talking about is the combination of pork cubes or cutlets and kimchi. I’ve made it once but I don’t think it was all that great coz I added too much water that the kimchi lost it’s hot and spicy flavor, somehow. I will try to make it again sometime and make sure I’ll make it the way I made this kimchi and cuttlefish stir-fry which essentially came from the pork and kimchi idea..

Spam Musubi(Spam Sushi)

The whole family loves SPAM. They love it when I make Spam burger. It’s really good. You just make it like you would make any regular burger. Fry the sliced Spam, and add all the burger fixings on a bun. Sometimes I would just fry ‘em up then we’ll eat them with rice, and a side of pico de gallo. One time I was watching Food Network and there was a Challenge episode involving SPAM. People made all sorts of delicious dishes using Spam. Spamdog ala Corndog didn’t quite impressed me though. I thought that was kind of greasy. But then someone mentioned how Hawaii likes making sushi out of Spam and I got intrigued. It’s called Spam Masubi. From then on, I’ve made sushi rolls using Spam, or this other sushi style that’s cute, and fun for both adults and kids. And it’s too easy to make too.

INGREDIENTS
  • SPAM
  • cooked sushi rice (sticky rice)
  • 2 tbsp of rice vinegar
  • salt and pepper
  • sprinkle of powdered ginger
  • seaweed sushi wraps
INSTRUCTIONS
  1. Cook the sushi rice. Put some in a bowl. Add rice vinegar, salt & pepper, and powdered ginger. Mix it together with a spatula.
  2. Take the Spam out of the can and slice in wide strips. Cut the seaweed in wide strips as well. Set them aside. (You can fry the spam too if you want)
  3. Grab a ball of rice, about a small meatball size. A golf ball size perhaps. Working with both hands, shape the rice ball kind of rectangular shape.
  4. Place a half of strip of Spam on top of the formed rice. Wrap a strip of seaweed wrap around it. Repeat the whole process for the remaining Spam, rice, and seaweed wrap.

For the kids, serve with a soy sauce and lemon juice sauce. For adults, wasabi would be great too.
