Fried Rice W/ Smoked Sausage & Cilantro

To make the fried rice as good as the ones from your favorite Asian restaurants the trick is to cook the rice the night before. Line foil on top of a cookie sheet. Spread the cooked rice on the pan, breaking the chunks of cooked rice as much as you can. Then store the pan of rice inside the fridge to cool down overnight.

Shrimp & Veggies Stir-Fry

Here’s the shrimp and veggies stir-fry that went with the cabbage-mushroom lumpiang shanghai that I made for our Super Bowl Dinner. Nothing extravagant here. Just a simple shrimp stir-fry dish with baby carrots, broccoli florets, and napa cabbage. That’s the joy in making stir-fry dishes. You can toss anything you want in it, either with pork, chicken or beef, or shrimp, or what other protein you want of course.

Ramen Noodles W/ Pork & Fried Egg

When my husband was off last Thursday, he asked for a substantial lunch that would really fill him up while he did his school homework. I suggested ramen noodles but he didn’t think it would be enough so I suggested pork chops next. He agreed, so I defrosted 4 pork chops quickly in the microwave, preheated the oven, threw the chops in a sheet pan, brushed them with bottled Caribbean Jerk marinade, then broiled them in the oven, 8 minutes on each side.

I served the pork chops with leftover mashed potatoes. I cooked 4 and we only ate 1 each so I had 2 pork chops left to eat whenever or do whatever sometime. By 4pm, I was wracking my brain what to make for dinner and I had to cook fast coz my husband had to go to school by 5:30pm. So I said, ramen noodles. And he said, “finnnnnnnne, make your ramen noodles.” Hahahaha! And I did. And I added the leftover pork chops, fried egg, and chopped cilantro in it too. So see, this ain’t your regular ramen noodles in a bowl coz when I make ramen noodles, I make it GOOD with all the fixin’.

A Surprise Chinese Take-Out For Lunch

The husband and the son went to Auto Zone today to get something done with the car. The daughter and I did our thing around the neighborhood by going for a walk and taking pictures of the trees and leaves. I wanted pictures of this year’s Fall foliage. I will post those in my other blog sometime tomorrow. As she and I were turning around at the end of the very long road, I saw our car driving towards the house so I told my daughter we had to hurry home coz I knew they’d be looking for us. Lo and Behold, a few minutes later Daddy was at the end of the driveway waiting for us. We had a long way to go so the husband went back to the house, I’m assuming, then went back to the end of the driveway to check on us again, Hehe. I guess we were walking too slow and enjoying the wind far too much. Once we finally reached the house, my husband asked what I was thinking of making for lunch. I didn’t really know and haven’t thought about it at all. I actually haven’t eaten anything at all at that time. The little girl had a bowl of Reese’s Puff cereal for breakfast and I made her grilled cheese sandwich before we went for our walk.

Crab Flakes & Broccoli Slaw Stir-Fry

We spent Saturday afternoon at Hubb’s Corn Maze so by the time we got home, we just wanted something fast for dinner. Spaghetti is a fast pasta dish to make but I didn’t feeling like eating something heavy. I remembered the pack of crab flakes that I was reserving for sushi rolls. I figured I could make a stir-fry out of it with broccoli florets and mushrooms. But then I didn’t want to spend time chopping more after chopping the onions, garlic and ginger so I grabbed the bag of broccoli slaw instead. Good thing I already have leftover rice so I served this Crab Flakes & Broccoli Slaw Stir-Fry with rice to the husband and son who were actually getting ready to go fishing too. So I pretty much just tossed everything in the wok and we had dinner in no time.

Pork, Baby Corn, & Water Chestnuts Lo Mein

I’m adding this to my collection of Lo Mein recipes here at Feistycook. Variety is good in noodle-based recipes. Use regular spaghetti noodles or angel hair. The latter is one of my favorite pasta noodles so I usually use that when making Lo Mein but I switch it up a bit once a in while by using the regular spaghetti kind. Anyhooo, let me show you how easy to make this dish.

Orange-Sesame Chicken

I realized the other day that it’s been a while since I made sesame chicken. I’m pretty sure we’ve eaten the dish from a Chinese restaurant quite a few times though. It’s really easy to make but the part where you fry the chicken pieces is what discourages me coz it’s very time consuming. So if you’re going to make it make sure you have nothing else in mind or any other chore you have to do right at that moment.

But isn’t this post about orange-sesame chicken? It sure is, and guess what, it’s just like making sesame chicken. We’re just going to add juice and zest of fresh juicy oranges.

Homemade Pork BBQ Siopao

When I made the homemade baked pork barbecue buns back in February, I did mention that I set aside 4 buns to steam which is mostly known as siopao. There is an easy way to make siopao using biscuit dough but if you want to feel accomplished after dealing with flour, yeast, kneading and dough rising then continue reading this post.

Beef, Broccoli, & Shitake Mushrooms Angel Hair Lo Mein

I couldn’t think of a clever title to introduce Angel Hair pasta as the noodles I used for this Lo Mein. Beef, Broccoli, & Shitake Mushrooms Angel Hair Lo Mein sounded pretty good to me. Angel Hair happens to be my favorite pasta so I try to use it more besides making regular spaghetti, or baked spaghetti or Shrimp Alfredo out of it.

Guess what? You can use spaghetti noodles or Angel Hair to make Asian noodle-based dishes.
