Before the year ends, let me share our Christmas Eve and Christmas Day feasts. Christmas Eve was spent with my brother-in-law’s family. Unlike on Thanksgiving Day where there were an abundance of food, we made the Christmas Eve feast simple. Roast Turkey, dinner rolls, mashed potatoes, peas & carrots veggie mix, and chocolate cake for dessert. There was also an apple pie but we didn’t get the chance to slice into it.

For our Christmas Day I really wanted ham so we had that with fried rice using some of the leftover turkey and veggie mix from the night before. I also made green beans with garlic.

Our desserts were Filipino Fruit Salad(add extra pineapples and fresh apples) and cream cheese flan. And we still have leftovers that I’m hoping will all be gone by January 1st. Well, except for the ham boned which will be delicious in split pea soup.

I hope everyone had a lovely Christmas. Happy New Year!
