fetacheeseomelet-4 I made Feta Cheese Omelet for breakfast last Saturday and it was delish. You don’t really need much for this. 2 eggs for each person, a little bit of milk, seasoning, sprinkles of feta cheese as fillings, and a little bit more for garnish on top. I’m pretty sure you can make this with other kind of cheeses. Blue cheese, perhaps? If you’re not that adventurous, shredded cheddar would do just fine.

Recipe: Feta Cheese Omelet

Ingredients

  • 2 eggs
  • 2 tbsp of milk
  • sprinkles of lemon pepper
  • 2 tbsp of crumbled feta cheese
  • butter for cooking

Instructions

  1. Melt butter in a non stick pan. In a bowl, beat 2 eggs with milk and sprinkles of lemon pepper. Pour the egg mixture into pan, cook for a few seconds then pull the edges into the middle while tilting the pan. Do this a couple of times.

  3. Let the eggs settle then sprinkle most of the feta cheese on one half. Save some for garnish. Fold the half on top of the other. Cook for another minute then gently slide it onto a plate.

Serve with toast on the side and/or fruits. The homemade strawberry jam on the toast is made by my mother-in-law and it is sooo good.
