  1. In a bowl, combine 1 tbsp of active dry yeast with 1 and 1/2 cup of warm water. Let that sit for 5 minutes. In a larger bowl, combine 3 and 1/2 cup of flour and sprinkle of salt. Create a well in the middle then pour the yeast mixture in it. Add 1 tbsp of olive oil. Gently stir until it all comes together in a ball.
  2. Lightly flour a flat surface. Knead the dough until it’s smooth. Brush a little bit of oil into a bowl. Place the dough inside, cut a cross on top, then lightly brush the top with oil. Cover the bowl to let the dough rise for 2 hours.
  3. After 2 hours, the dough should’ve doubled in size. Brush the bottom of a round pizza pan with olive oil. Cut a 3/4 size of the dough for this pizza.
  4. Sprinkle a little bit of flour in a counter top. Roll the pizza dough thinly, then transfer it into the round pizza pan. Keep stretching the dough to fit the pan. You might encounter a few holes but just cover it with the dough by stretching and pinching gently.
  5. Spread the pizza sauce into the dough. Sprinkle shredded cheddar cheese on top, then alternately place the salami and ham triangles. Set this pan aside and work on the second pizza.
  6. Preheat the oven to 355°.
  7. Put the sliced zucchini, tomatoes, and mushrooms in a large bowl. Drizzle olive oil all over, sprinkle salt, black pepper, dried basil and dried oregano. Stir the whole thing to coat with the seasonings and olive oil.
  8. Use the remaining dough for the second pizza. Use a small sheet pan if you don't have a small-sized round pan.
  9. Spread the pizza sauce into the dough. Place the zucchini slices on top. Sprinkle a generous amount of shredded mozzarella cheese. Then alternately add slices of tomatoes and mushrooms on top.
  10. Place the large round pan in the bottom rack, then the rectangle sheet pan on top rack. Bake it in the oven for 35-40 minutes.
