Cod Fish & Penne W/ Asparagus

My fish and pasta combo experiments like salmon & penne alfredo, and the Catfish Spaghetti W/ Garlic-Tomato-Scallions Sauce have been very good so I decided to try this cod fish and penne with asparagus dish too. Like the 2 former fish & pasta combo dishes, this one is also a hit.  After my husband and I had seconds , I had to put away the rest before getting the crazy idea of having a third serving each. Seriously!

Cod Fish & Penne W/ Asparagus

Serves: 4-6
INGREDIENTS
  • 5 cod fillets
  • 1 sm onion, sliced
  • 1 cup of flour
  • sprinkle of lemon pepper
  • sprinkle of garlic powder
  • 1 stick of butter
  • 1/2 cup of white wine
  • 1/2 cup of water
  • 1/4 cup of grated Parmesan cheese(+more)
  • 6-8 pieces of asparagus, chopped in small pieces
  • half a box of penne, cook al dente
INSTRUCTIONS

  1. Boil water for penne, cook al dente.
  2. Place the flour in a plate. Season with lemon pepper, and garlic powder. Drench the cod fillets with the flour mixture.
  3. In a skillet, melt 3/4 stick of butter. Pan fry the cod fillets on both sides until golden brown. Set aside in a platter.
  4. Using the same pan, add the remaining butter into the pan to melt. Add the onions to cook until soft. Add the water, wine, sprinkles of lemon pepper and garlic powder and asparagus. Stir and cook until asparagus are tender.
  5. Slice the pan-fried cod fillets in chunks.
  6. Drain the water off of the penne. Put the pasta back into the pot. Add the fish, then the asparagus mixture.
  7. Gently stir everything together. Sprinkle the grated Parmesan cheese then gently stir the whole thing together again.
  8. Serve in a plate, then sprinkle more grated Parmesan cheese on top if you want.
