Cajun Spiced Beef Fajitas & Tacos

When I make fajitas or tacos, I usually just season the meat as I cook it. I changed it up a bit the other night by marinating the beef strips in Cajun spices seasonings that I mixed up myself. The entire dinner was really good coz I didn’t just serve the beef as fajitas but as tacos as well. My husband slightly toasted the corn tortillas while I cooked the beef with peppers and onions in between setting up all the condiments for our Mexican dinner.

Before everything else, make the pico de gallo first. Chop up tomatoes, scallions, and cilantro. Place in a bowl, then season with salt and pepper, and lime juice. Lemon is fine if lime is not available. Stir everything together. Sprinkle red pepper flakes if you want too. Cover the bowl then store in the fridge.

In a small bowl, combine chili powder, cumin, garlic powder, cayenne pepper, dried basil, dried oregano, salt and pepper. Mix all of that together and set aside.

Slice the beef in thin strips then place in a marinating bowl. Sprinkle the Cajun seasonings all over. Stir the meat to coat. Cover the bowl and store it in the fridge to marinate for an hour or 2.

When ready to cook, heat up oil in a saute pan. Add the marinated beef. Cook until tender. About 12-15 minutes. Add the onions and cook for 3-5 minutes. Add the peppers last and cook for 3 minutes or so. Taste it to check if you need to add more salt and pepper. I didn’t have to but it’s up to your palette.

By the way, while cooking the beef, onions, and green peppers, ask someone to toast the corn tortillas. Brush an iron skillet or non-stick pan with a little bit of oil. Toast each side of the corn tortillas 5 seconds on each side. Un-toasted corn tortillas break when it time to fill them up so don’t forget this step.

Set up the table with the bowls of pico de gallo, shredded cheese, refried beans, and sour creaam. slice up some avocados too if you have some.

I would’ve preferred the Cajun seasoning to be spicier but I know my kids wouldn’t like that so I had to compromise. In any case, we had a fun Mexican dinner of Cajun spiced beef fajitas and tacos.

INGREDIENTS

  • 2 medium tomatoes, chopped

  • Beef Filling
  • 3-5 pounds of beef chuck, slice din thin strips
  • 1 large onion, sliced
  • 1 large green pepper, sliced in strips, discard the seeds
  • Condiments
  • 1 can of refried beans
  • 1 cup of sour cream
  • 1 cup + more shredded cheese
  • sliced avocados(optional)
