There were a couple of leftover pan-fried breaded Swai fillets the other day so I decided to warm it up, sliced it diagonally then laid it on top of a bed of mixed greens for a healthy and hearty lunch.

Fish Preparations: Drench the Swai fillets in an egg mixture(1 egg + 1/2 cup of water), then coated both sides with white corn meal seasoned with salt and pepper. Pan-fried the fillets in butter, 6-8 minutes on each side.

Like I said, the fish was a leftover from another night’s dinner. I sliced 1 tomato in thin rounds then drizzled the salad with Lite Ranch dressing before I devoured the whole thing. It definitely hit the spot especially after doing an intense cardio workout.
