Cucumber and Apple Slaw

Posted in  Fruit Creations, Side Items, Vegetable Creations No comments

This is just a simple side dish that I put together to go along with the sliders the other day. Instead of the cabbage based slaw, I used cucumber and green apple. It’s a combination of soft, crunchy and just the right about of sweetness from the apple.

Peel a cucumber. Slice in thin strips. Peep the apple, then slice in thin strips as well. In a salad bowl, combine cucumber, apple, mayonnaise, red wine vinegar, sugar, salt and pepper. Gently mix everything together.

Cover the bowl and store in the fridge to chill for a few hours.

Serve along side burgers or any grilled meat.
