Grilled-Steamed Zucchini & Yellow Squash

This Grilled-Steamed Zucchini & Yellow Squash is s healthy and easy side dish to make that would deliciously go with anything. I got the veggies from a local produce vendor last weekend.

The best time to make this is when you’re grilling something so you can double-grill and save time in cooking. That makes sense, right?

Slice the zucchini and yellow squash in rounds. Not to thick but not to thin either. Put them in a bowl, drizzle olive oil, then season Italian seasoning, salt and pepper.

Take a sheet of foil, dump the veggies in the middle, making sure there are enough space on the side to fold. Fold in the middle a few times to secure a flap. Then seal the edges by folding that too.

Place on top of the grill and cook for 15 minutes.

Place in a platter after cooking. Carefully open the folds. Don’t put your face too close in the foil when opening it coz you’ll burn your beautiful face off with the steam. We definitely don’t want that to happen.

Serve with grilled fish, or bbq meat dishes.
