Sweet Potato Chips

I saw the sweet potatoes at the grocery store the other day and they just made me crave for sweet potato chips. I dunno why but that’s exactly what I thought about a soon as I saw them. The last time I had anything with sweet potatoes was Thanksgiving of last year when I made sweet potato pies and sweet potato muffins so I figured I’m due for a sweet potato fix.

If you have a potato slicer that slices potatoes, sweet potatoes, tomatoes or whatever really really thin, then use that to slice 1 sweet potato that’s been washed thoroughly. Wash it well so you don’t have to peel. If you don’t have a slicer, use a sharp knife and carefully slice thin rounds. As thin as you can get without slicing your pretty little fingers of course.

Heat up oil in a pot. Fry up the thinly sliced sweet potatoes in batches. About 2-3 minutes in medium heat. Maybe less than that. You gotta pay attention to the chips coz they cook fast and you don’t want to burn them. Place the fried potatoes in a coriander with a bowl underneath to catch the excess oil. Fry up the rest.

Just season with salt and pepper and be done with that. I decided to sprinkle lemon-pepper and chili powder for just an added kick. My son and I liked it but the husband didn’t. Oh well, more for me so I ate his sweet potato chips, Hihi.

I served the sweet potato chips as a side dish for turkey burgers with lettuce, tomatoes, and avocado. Healthy & Yummy!
