6-Ingredient Braised Chicken With Onions & Mushrooms

This braised chicken with onions and mushrooms is very easy to make and doesn’t require that many ingredients. As a matter of fact, besides the little bit of oil to sear the chicken, the main ingredients consist of only 6. Add salt and pepper and you are on your way to a scrumptious dinner.

Heat up oil in a pot. Sear the chicken pieces, skin side first, 5 minutes each side. Once seared, take ‘em out, place in a platter then set aside. Using the same pot, add the sliced onions. Stir it around and let cook until softened.

Once the onions are cooked, add tomato paste, 2 cups of water and 1 cup of any white wine you’ve got. Season with salt and pepper. Stir it around then cover. Let that simmer for 35 to 40 minutes. Stir occasionally. Add a few button mushrooms in the last 5 minutes of cooking.

The sauce would be reduced and thickened while simmering. Serve with boiled & slightly buttered pasta and any kind of veggies on the side.

1 small can of tomato paste
a few pieces of button mushrooms
2 cups of water
1 cup of white wine
a little bit of oil for searing
salt and pepper
