Baked Spiced Chicken
It’s really true when they say that you can make anything with chicken. Well not for dessert of course but dishes wise, chicken is like THE Classic Black Pumps in the meat department. You can create all sorts of flavorful dishes out of chicken. I’m more of a porker but hey, chicken is good too.
When I have no idea what to make with chicken for dinner, I go through my bottles of spices and herbs to think of what I could combine together as a rub for the chicken. That’s what I did with this baked spiced chicken.
Preheat the oven to 355 degrees.
Combine sprinkles of chili powder, sage, garlic powder, black pepper, salt, star anise, blackened seasoning and a pinch of saffron. Stir everything together to combine well.
Rub both sides of chicken with the spice rub. Make sure to get under the skin too so the flesh gets the spice rub as well.
Place the chicken pieces top of a foil-lined sheet pan. Bake the chicken in the oven for 35-40 minutes.
Let the chicken rest for 8-10 minutes before serving.
Serve with veggies and rice on the side.

sprinkle of blackened seasoning
sprinkle of salt
sprinkle of black pepper
a pinch of saffron
Instructions

Quick Notes
Serve with veggies and rice on the side.
Line the sheet pan with foil to make for easy clean-up after cooking. The foil will catch crumbs and excess grease. Just roll up the foil after transferring the meat into a platter, then just throw the foil away.
