Basic Cornbread Recipe

You might find yourself in the middle of your kitchen one day thinking about making a cornbread but you don’t have a can of creamed corn. But you do have a can of corn kernels, it’s not just creamed. Well, you have milk, sugar and blender, right? A-Ha!

INGREDIENTS:
* 1 can corn kernels, drained
* 1 cup of milk
* 1/4 cup of sugar
* 1 cup cornmeal
* 1/2 cup flour
* 1/2 tsp salt
* 3 tbsp sugar
* 2 tsp baking powder
* 1/2 stick butter, melted and cooled
* 1 egg, slightly beaten
* extra butter to grease the pan

Make your creamed corn: blend the corn kernels, milk and sugar together in a blender.

Preheat the oven to 355°. Butter/grease a square baking pan.

In a bowl, whisk together the flour, sugar, baking powder, and salt. Pour the creamed corn, beaten egg and melted butter. Stir everything together to mix.

Pour into the buttered pan then bake in the oven for about 20 minutes. Cool in a rack.

Turn it over into a bread board then cut in squares.

Top with butter. Serve the cornbread as a side dish to any baked, grilled or fried meat or fish.
