I thought about grabbing a bag of frozen chicken nuggets from the grocery store while I was doing my shopping this weekend but changed my mind in the end. I know I could make a better and “fresher” batch of homemade chicken tenders. And I did. And they were soooo good my son wouldn’t stop talking about them. And the leftovers were even better the next day….for hangover early morning cold munchies. YUM!
INGREDIENTS:
3-4 pounds boneless chicken breasts
2 eggs, beaten
1/4 cup of milk
1/2 cup of grated Parmesan cheese
1 1/2 cup of flour
1 1/2 cup of bread crumbs (make your own by toasting a few slices of bread, then blend in the blender or magic bullet)
garlic powder
Italian Seasoning
salt and pepper
oil for frying.
Heat up oil in a pot, or deep fryer if you have one. I don’t. THANK GOD!!
Season flour with garlic powder, salt and pepper. Beat the eggs and milk in a bowl then stir in the grated Parmesan cheese. Blend your breadcrumbs, then place in a large ziploc bag. Slice the boneless chicken breasts in strips.

Drench the chicken strips in flour.

Then into the eggs-milk-cheese mixture.

Then into the bread crumbs. BTW, You can also season the breadcrumbs with salt, pepper and dried herbs if you want.

Fry the chicken tenders. You’ll need to do this in batches. Place the fried chicken tenders into a papertowel-lined plate to drain the grease.

SAUCE: Combine a couple of squeeze of honey and spicy brown mustard. Whisk until well-blended.
Now doesn’t that look good and sounds easy to make? Serve it for lunch, dinner or even as appetizers.
