Baked Mojito-Key Lime-Cilantro chicken

I had a few leftover stalks of cilantro that would probably go bad in a few days so I decided to chop and add them up in a mojito-key lime-marinade I was making for the chicken. It’s easy to make and definitely delicious.

INGREDIENTS :

* 6-8 pieces of chicken (legs, thighs)
* few stalks of cilantro, finely chopped
* 1/4 cup of Captain Morgan’s Mojito drink
* juice from 8 key limes
* 2 tbsp olive oil
* sprinkle of salt and pepper

Combine chopped cilantro, Mojito, key lime juice, olive oil, salt and pepper in a bowl.

Place the chicken pieces on a container. Pour the marinade all over the chicken. Toss to coat the meat with the marinade. Cover then store in the fridge to marinate for at least 2-3 hours or overnight.

Preheat the oven to 365°.

Bake the chicken in the oven for 40 to 45 minutes.
