Weekend is my usual days to cook using the Crockpot. I prepare the meat after eating breakfast or brunch which is usually about 9 or 10am. Once the Crockpot is cooking I could relax or spend quality time with the family. I know that we’ll have dinner by 5pm. This past weekend I decided to cook beef roast with potatoes.

Balsamic Vinegar & Sesame Oil Grilled Chicken

There are days when my brain sort of stops functioning and couldn’t for the life of me get things together. It usually happens when I wake up really late that I am just barely getting through all the tasks at hand. That’s when it’s hard to think of what to make for dinner. I keep rushing to get things done that I forget to plan what to cook. Boneless chicken breasts and a well-stocked pantry usually come to the rescue.

I had to thaw the chicken in the microwave of course and just combined herbs and sauce together in a bowl to use as a 15-minute marinade.

INGREDIENTS:
4-5 boneless chicken breasts
1/4 cup of balsamic vinegar
1 tsp of sesame oil
1 tsp of Worcestershire sauce
1 tsp of soy sauce
sprinkle of pepper
sprinkle of Italian Seasoning
sprinkle of dried basil

No need to pound the chicken breasts. Just slice each breasts in the middle, equally so you’ll get 2 thin slices of chicken.

In a container combine balsamic vinegar, sesame oil, soy sauce, Worcestershire sauce, pepper, Italian seasoning and dried basil. Don’t use too much sesame oil because the flavoring is really strong. So a little comes a long way.

Marinate the chicken with the marinade for 10-15 minutes. Grill each sides of chicken breast for 8-10 minutes.

This was a really fast dinner to make. You can make your sides while the chicken are marinating and grilling.

Pork & Onions In Balsamic Vinegar

Let it be known that Pork is my favorite meat. I could eat chicken, beef, venison, turkey, veal, and lamb but nothing beats Pork in my book. Which is why I’m always looking for good pork recipes and experimenting in my own kitchen to keep it exciting.

Here’s an easy pork dish I came up with one night. When my husband asked me what I was making for dinner I didn’t have a definite answer because I was just “winging” it. Everything turned out well as usual. I mean we’re all still alive so that is a good sign :) .
