Avocado, Black Beans, Tomatoes & Cucumber Salad
This side salad was inspired by a guacamole salad made by Ina Garten in an episode of Barefoot Contessa show. It has been a while since I saw that particular episode but I remember telling myself that I’d make it sometime. My version had some changes because I couldn’t remember what dressing she used, and Ina used cherry tomatoes and also added red onions and bell peppers. My twist is using chopped tomatoes, and adding cucumber and the change in dressing.
INGREDIENTS:
2 ripe avocados, seeded, peeled and cubed
2 small tomatoes, cubed
1 can of black beans, rinsed and drained
1 sm cucumber, cubed (optional)
sprinkle of sale & pepper
2 generous drizzles of Italian salad dressing
juice of half of lemon
Combine everything together in a bowl. Gently mix all the ingredients together. Be really gentle coz you want to maintain the shapes of the avocado. Chill in the fridge before serving.
The cucumber is optional. The contrast between crunchy cucumber and creamy avocado might not suit your palate. IN any case, this is a good side dish for burgers, hotdogs, kebabs or any grilled meat.
