Baked Lemon-Scallions Chicken
If you like lemon flavored dishes once in a while, here’s a chicken recipe that you might like. Well I hope so anyway. A simple lemon marinade will do the trick.
How To Eat Pork Rinds
I like pork rinds, you like pork rinds, who doesn’t like pork rinds? The best pork rinds are the ones in hugs bags. Or the ones from the butcher place. Don’t get the small bags with shiny packaging from grocery stores. I used to get them but once I started buying my pork rinds at the butcher place where I buy our pork supply, and I haven’t bought it anywhere else since.
Salmon Tomatoes & Scallions Frittata
Frittata is one of the Family’s favorite for weekend brunch. I’ve made potato & bacon frittata, corned beef hash frittata and sometimes I used leftover meat or seafood from the night before as part of the filling.
Here’s a salmon tomatoes and scallions frittata from the leftover pan-fried salmon.
Crab Flakes & Napa Cabbage Stir-Fry
When I’m craving for stir-fry without having to chop all sorts of fresh vegetables and meat or seafood, I rely on using 2 main ingredients. It’s always nice having packs of imitation crab flakes and some type of cabbage. Napa cabbage and bok choy are pretty much staple vegetable items in my grocery list. They’re good for stir-fries or soups.
Parmesan Cheese Butter Herb Potatoes
Instead of making mashed potatoes again, why not make this Parmesan Cheese Butter-Herb Red Potatoes for a change? You can use either red potatoes or regular white potatoes.
Big Daddy’s Fried Chicken
It used to be that whenever I make fried chicken I get frustrated with the end result. The outside part of the chicken were cooked (sometimes the lower side is burnt) but the meat inside is not. I actually have to make a cut on the chicken while frying to cook the meat evenly with the skin side.
Things have changed. Thanks to an episode of Big Daddy’s House on Food Network, my fried chicken are now cooked to perfection. By the way Big Daddy aka Aaron McCargo Jr is the current winner of The Next Food Network Star.
Here’s the recipe of Big Daddy’s Fried Chicken:
How To Make Sweetened Iced Tea
There are iced tea powder mixes that you could just add water and store in the fridge to make iced tea. But I don’t use those in our house. I go for a more traditional way, if that’s how you call it, using actual tea bags.
Here’s How To Make Sweetened Iced Tea.

Chocolate Cupcakes W/ Coconut Buttercream Frosting
I actually bought the bag of coconut flakes for macaroons after I saw Ina Garten’s recipe on Food Network. I love macaroons and when I first made some years ago, it didn’t look like macaroons at all. That means they were an EPIC Fail. But I learned what I did wrong while watching Ina make her macaroons so I was definitely ready to redeem myself. Too bad that when I started to assemble the stuff in my counter to make them, I realize that I forgot to buy 1 major ingredient. The condense milk. Like Duhhhhh. However, I did not let that deter me from making something sweet that day, heh. If all else fails, MAKE CUPCAKES. If there’s a coconut cake, I’m sure cupcakes with coconut frosting wouldn’t be so bad. And VOILA, behold the chocolate cupcakes with coconut buttercream frosting.
Shepherd’s Pie W/ Chick Peas
I realized that it has been a long time since I made one for the family. so for tonight’s dinner, I made Shepherd’s Pie with Chick Peas. Why the latter ingredients? Because I ran out of regular sweet peas.
