I have a good collection of cook books that I have accumulated through out the years. Not a lot, but enough to keep me happy. While I “love” them all, I am particularly more enamored with my Better Homes and Garden New Cook Book Pink Ribbon Plaid Cookbook.

Something fruity and crunchy are added into pancakes to make it interesting for breakfast. Besides making the basic recipe for pancakes, I had to make the apple-cinnamon filling separately.

Asian Steamed Meatballs

I had leftover pork fillings when I made pork dumplings for dinner last night. Usually I’d put the leftover in a freezer bag, freeze it, and use it later for dirty rice. Last night I decided to turn them into mini meatballs and steamed them like I did the pork dumplings.

If you want to make a lot for appetizers or snacks, here’s a modified recipe of the dumplings to make Asian Steamed Meatballs.

Honey Mustard Wings

When we are having our Hot Wings night, I set aside some of the fried wings for the kids. They usually get them plain or sometimes I make honey-mustard sauce to make them honey-mustard wings. It’s quite simple by the way.

Baked French Fried Onions Pork Chops

 frenchonion-porkchops3

I got this idea from a TV Commercial where a Mom breaded boneless chicken breasts with French fried onions then baked them in the oven and dinner was ready in no time. Hubs and I agreed that the chicken looked really good. I’ve planned on trying it for a while now but didn’t have enough French Friend onions until a few days ago. Instead of boneless chicken breasts, I decided to use pork chops. I’m a porker like Anthony Bourdain so I’m always looking for recipes that could work with pork. And this definitely works with pork.

Farmer’s Market Goodies: August 15th

farmers-markek-produce

We’ve lived here in NC for about 3 years now but today is the only time I was able to visit the Farmer’s Market in Raleigh. I actually didn’t know about it until a few days ago when my husband informed me of the advertisement on the local news. So we got up early today and headed out to get some fresh produce and meat. I should tell you that the most intriguing part of my week happened after my husband told me about rabbit meat at the Farmer’s Market. I haven’t stopped thinking about it until we got to the place this morning.

Cheesy Hamburger Patties

When we’re having homemade burgers at home, I don’t just make patties of the ground beef. I actually add some other elements on it to make it special and not be boring. Here is my latest hamburger creation.

INGREDIENTS :

  • a pack of ground beef
  • 1 egg
  • fresh bread crumbs (break apart 1 toast, and put it in a blender)
  • a couple fistful of shredded cheddar cheese
  • 1 tbsp powdered lemon-garlic seasoning
  • sprinkle of salt and pepper
  • burger buns, lettuce, tomatoes, ketchup, mustard, mayonnaise, pickles

In a bowl, combine ground beef, bread crumbs, egg, cheese, lemon-garlic, salt and pepper. Use your hands to mix everything together.

Form a ball from a fistful of mixture, then flatten it into a patty. Repeat until you have formed all the patties.

Cook the patties on a grill, griddle, or basic frying pan (don’t use any oil).

I cooked my patties on a griddle since we still need to get gas for our grill. Cook first side of the patties for 5-8 minutes. Flip to cook the the other side. After cooking about 2 minutes or so, place the slices of cheese on each of the patties. This will slightly melt the cheese on top. Just cook for another 6 minutes or so.

There you go, start building your hamburgers with mayonnaise on the bun, then a patty, mustard, ketchup, a slice of tomato, some lettuce, and pickles too. . I served mine with broccoli coleslaw.

Orange Marmalade Pancakes

I love orange marmalade. If I could eat a jar of it in one sitting I would. But we all know that wouldn’t be healthy. So if I could incorporate it in dishes  sometimes, I always do. Like these orange marmalade pancakes.
