SELF-FROSTING NUTELLA CUPCAKES

When I bought the jar of Nutella last weekend I made a vow (yes I did) that part of the Nutella will be made into cupcakes. I’ve always planned to do that whenever I buy one but it never gets that far. Darn those nutella sandwiches and occasional spoon licking. Well, I finally made self-frosting nutella cupcakes and golly they were so beautiful and delicious.

This self-frosting nutella cupcakes recipe was adapted from Connie of Pinoycook which she got from Baking Bites.

INGREDIENTS:

10 tbsp butter, softened
3/4 cup white sugar
3 eggs
1/2 tsp vanilla
1 3/4 cups sifted all purpose flour
1/4 tsp salt
2 tsp baking powder
1/3 cup Nutella

Preheat the oven to 325°. Lined muffin pans with muffin/cupcake paper liners

nutella-self-frosting-cupcakes-step3 Do this until light and creamy. About 2 minutes or so.

Add vanilla, then the flour, baking powder and salt. Continue to mix everything together until well incorporated.

The mixture would be sort of lumpy like it would be hard to pour. Don’t worry, that’s how it should be. As long as it’s not hard as rocks of course.

nutella-self-frosting-cupcakes-step8 Use an ice cream scooper to fill up the cups with the batter. About 3/4 full.

nutella-self-frosting-cupcakes-step9 Top each batter with 1/2 tsp of nutella.

nutella-self-frosting-cupcakes-step10Use a toothpick or a satay skewer to swirl the nutella in with the batter.

nutella-self-frosting-cupcakes-step11Make sure a little bit of the batter comes on top. Bake in the oven for 20 minutes.

    I found the dough too dry & the Nutella does’t swirl because it is too thick. I added 125 ml Milk to the dough.
    I added 3 Tbs milk to 3 Tbs Nutella and stirred until completely incorporated, making a softer Nutella & could therefore swirl more easily.
    Turned out a whole lot better.
    Mixture made 30 cupcakes

    Just made these! So easy to do! I did have to add a little bit of milk though, and had to leave them about 5-10 minutes longer because I made them to be a bit bigger than I think they were supposed to be. Thanks so much for this though! :)

    @Emilia, as indicated in this post, it bakes 20 minutes, and the 2nd to the last picture shows 12 cupcakes.

    Try using about 1/4 cup vanilla coffee syrup instead of milk. You can add it to any cake batter for extra moisture! Thanks for the yummy recipe!!!!

    When I first made these, they were very very dry. I added a bit of milk but it didn’t really do the job. So, I took an individual serving size of motts apple sauce and added it into the mix. Now that really did the job, my cupcakes are moist and delicious :)

    A cup cakes with an icing toppings makes me pleasant to look. This food are a kind delicious because of the chocolate that added on it. I will prepared it later on my snack time.

    Yummy!! Nutella is my favorite for all time. I’m so glad there are several unique ways to enjoy nutella. I’ll try to bake some for my kids and surely they’ll love it!

    Excellent! The cup cakes are so very delicious. I like it. You know what? When I only see that the picture I feel hungry at all. I try that into my house, well for my children. You’ve just mastered that. That’s the best ever, keep it up.
