When I bought the jar of Nutella last weekend I made a vow (yes I did) that part of the Nutella will be made into cupcakes. I’ve always planned to do that whenever I buy one but it never gets that far. Darn those nutella sandwiches and occasional spoon licking. Well, I finally made self-frosting nutella cupcakes and golly they were so beautiful and delicious.
This self-frosting nutella cupcakes recipe was adapted from Connie of Pinoycook which she got from Baking Bites.
INGREDIENTS:
10 tbsp butter, softened
3/4 cup white sugar
3 eggs
1/2 tsp vanilla
1 3/4 cups sifted all purpose flour
1/4 tsp salt
2 tsp baking powder
1/3 cup Nutella
Preheat the oven to 325°. Lined muffin pans with muffin/cupcake paper liners
Using a mixer, cream butter and sugar together
Do this until light and creamy. About 2 minutes or so.
Beat the mixture after each egg.
Add vanilla, then the flour, baking powder and salt. Continue to mix everything together until well incorporated.
The mixture would be sort of lumpy like it would be hard to pour. Don’t worry, that’s how it should be. As long as it’s not hard as rocks of course.
Use an ice cream scooper to fill up the cups with the batter. About 3/4 full.
Top each batter with 1/2 tsp of nutella.
Use a toothpick or a satay skewer to swirl the nutella in with the batter.
Make sure a little bit of the batter comes on top. Bake in the oven for 20 minutes.
Serve cool or a slightly warm.

I thought these cupcakes would be more like muffins. I do not like cake because it is sooooo dry. I do like the fact that the cupcakes are not loaded down with sugar. They are sweet to the extent of European limits which is lots les than we put in our food. But unless you are a cake lover, it’s too dry for me.

I attempted these and they just kind of ended up like foamy mush :S any idea how i can prevent this from happening next attempt? lol
I don’t get it because the mix looked just like any other muffin batter but they just didn’t seem to cooperate with me after being baked :O
Hmmm, like muffin batter? Well that’s usually a little bit runny. Supposed to be lumpy. How big were the eggs?
It was quite a thick batter..Not a dropping consistency..Like it was described in the recipe..The eggs were medium..
I speculate that my oven is on the way out, the temperature isn’t working right..I just tried to bake a victoria sponge cake and it took twice as long as normal!
I’ll give it a go another time and leave them longer, or better yet replace my cooker.
