I had another pack of frozen mussels from the Baked Mussels that I made last Christmas that needed to be cooked before it goes bad so I cooked them in Alfredo sauce with mushrooms for the Angel hair pasta.
INGREDIENTS:
- 1 pack of frozen mussels, thawed and unshelled
- 1 jar of Alfredo sauce
- 5 button mushrooms, sliced
- 3 cloves of garlic, chopped finely
- 4 tbsp of olive oil
- 1 cup of the pasta water
- sprinkle of powdered lemon-pepper seasoning
- sprinkle of dried basil
- sprinkle of salt
- cooked Angel hair pasta (regular spaghetti noodles are ok too)
Cook the pasta according to the box. For 4 people, I only used half and a little bit more of the pasta.
Make sure the mussels are thawed. Take them out of the shells and set aside on a bowl. I would’ve have cooked and served the mussels with the its shell but just to save time for the kids once dinner time I decide to just take them out.
Heat olive oil in a sauté pan. Add garlic. Don’t burn ‘em. Then add the mussels and cook for about 5-8 minutes or so, maybe less. Stir occasionally. Add the sliced mushrooms, and sauté for a few minutes.
Add the Alfredo sauce on the pan. Take a cup of pasta water from the pot. You know, the pot where you cooked your pasta. Save a cup of the water before rinsing the pasta off. Add that cup of pasta water onto the empty jar of Alfredo sauce. Cover and shake to get the leftover sauce mixed in with the water. Then pour the whole thing into the mussels mixture. Add the sprinkles of salt, lemon-pepper and dried basil seasonings.
Stir, then cover the pan to cook for 10 minutes or so. Stir occasionally.
Turn the stove off after 10 minutes. Gently dump the pasta into the mussels and mushrooms pan, then gently toss the sauce and pasta together.
Sprinkle with grated Parmesan cheese if you like. Serve with French garlic bread.

Hello Ate, I have read the directions multiple times but it seems that you forgot to let your readers know when to add the mushrooms?I tried this recipe of yours yesterday and I like it very much(Im a pasta lover).I add the mushrooms after sauteing the mussels.It went well
