Whenever I visit the Filipino/Asian store nearby, I always grab a few packs of different mixes. Mostly I grab caldereta, menudo and sinigang mixes. I don’t live in the Philippines so the mixes are the closest to I have in tasting caldereta, menudo and sinigang dishes. There are also adobo, pansit, stir-fry, and tocino mixes but I don’t buy those coz I can make those dishes with my eyes closed without the help of a mix
. With the former 3, I need the mixes. But that’s not what this dish is all about..
Sure I buy the mixes to make what the packet says but sometimes when I’m on my experimental mode, I actually use the mixes of Caldereta or Menudo as rub seasoning for meat. I have used the caldereta mix for a beef roast cooked in a crock pot. In this instance, I once again used a packet of caldereta mix as a rub for chicken thighs which I baked in the oven for about 40 minutes.
INGREDIENTS:

chicken thighs, 4-6 pieces

1 packet of caldereta mix
Preheat the oven to 365°
Generously season the chicken pieces with the mix. Make sure the chicken thighs are evenly coated. Don’t be afraid to get underneath the skin of the chicken. Place the chicken in a pan, then stick it in the oven to bake for about 40 minutes or so. That’s it.
Serve with vegetable and rice. Replace chicken thighs with a whole chicken to make chicken roast, or pork chops or beef chunks if you want to. Grilling is ok too if that’s what you feel like doing for dinner
