My husband and I love Kimchi. Having spent a year in Korea while serving in the Army back in 2003, my husband had tasted the best Kimchi. He said people there eat so much of it and they also have different dishes where kimchi is incorporated into the dish inself instead of just being on the side when meals are served. One particular dish he keeps talking about is the combination of pork cubes or cutlets and kimchi. I’ve made it once but I don’t think it was all that great coz I added too much water that the kimchi lost it’s hot and spicy flavor, somehow. I will try to make it again sometime and make sure I’ll make it the way I made this kimchi and cuttlefish stir-fry which essentially came from the pork and kimchi idea..

For this lemon tilapia fillet dish, I adapted the recipe from my lemon chicken recipe. It was easy to prepare, fast too cook, and simply delicious. Coz when it comes to fillets, simplicity goes a long way.

When I bought the jar of Nutella last weekend I made a vow (yes I did) that part of the Nutella will be made into cupcakes. I’ve always planned to do that whenever I buy one but it never gets that far. Darn those nutella sandwiches and occasional spoon licking. Well, I finally made self-frosting nutella cupcakes and golly they were so beautiful and delicious.

I had another pack of frozen mussels from the Baked Mussels that I made last Christmas that needed to be cooked before it goes bad so I cooked them in Alfredo sauce with mushrooms for the Angel hair pasta.

I got hungry one day but didn’t want to eat any of the sweet treats or chips we got in the house. I remembered we had organic salad in the fridge but I wanted to spruce it up. I didn’t want leftover meat on it though. The light bulb turned on, boiled eggs. Behold, organic salad with boiled eggs and creamy Italian dressing. It was filling and healthy at the same time. Whenever I visit the Filipino/Asian store nearby, I always grab a few packs of different mixes. Mostly I grab caldereta, menudo and sinigang mixes. I don’t live in the Philippines so the mixes are the closest to I have in tasting caldereta, menudo and sinigang dishes. There are also adobo, pansit, stir-fry, and tocino mixes but I don’t buy those coz I can make those dishes with my eyes closed without the help of a mix
. With the former 3, I need the mixes. But that’s not what this dish is all about..

For my birthday dinner/ New Year’s Eve meal, the main entree was this deep fried pork roast which in Filipino culture is called Lechon Kawali. My husband actually handled the deep frying of this bad boy using the turkey deep fryer that we bought for our Thanksgiving Day turkey.
