Sweet & Sour Chicken
It’s rare that I make any Sweet & Sour dishes coz my husband is not into it. But thankfully, he’ll indulge when I make it it so I don’t mind at all that he doesn’t particularly like it.
INGREDIENTS:
- 3-4 pieces boneless chicken breasts, sliced in cutlets
- 3/4 cup of sweet & sour sauce (or make one, I opted for a jar this time around)
- 1 green pepper, cored and seeded, sliced in medium cubes
- 1 can of pineapple chunks, drained
- 1 medium onion, quartered
- 3 cloves of garlic, chopped finely
- 1/2 + a little bit more cup of cornstarch
- 1 tsp baking soda
- salt & pepper
- 3/4 cup of water
- oil for frying
Heat up the oil.
In a bowl, combine cornstarch and baking soda. Drench the chicken cutlets in the cornstarch and baking soda mixture.
In batches, fry the chicken cutlets on both sides. Drain the excess oil by placing the cooked chicken on top of a paper towel covered plate. Set aside the cooked chicken.
In a pan, sauté garlic in a little bit of oil. Add the green peppers, and onions. Cook until tender. Peppers should still be crispy. Stir in the pineapple chunks, sweet & sour sauce, and water. Stir everything gently. Cover then cook until it slightly boils.
Stir in the cooked chicken, and season with salt and pepper. Cook for about 2-3 minutes to incorporate the sauce into the chicken.
VOILA, serve with white rice.
