My 3 yr old daughter is currently on a phase where she’s only eating the toppings off of her pizza. She picks the pepperoni or sausages, mushrooms, olives, etc off and then she’s done. Last Friday we had take-out pizza which also provided us lunch the following day since we also has antipasto, wings and garlic bread with the pizza so it was inevitable we’ll have leftovers.
There were only 4 slices of pizza left though so I didn’t get one. Hubs had 2, the boy had 1 and I gave one to the little girl even though I knew she was only going to eat the meat off of her slice. I was kinda hoping she was done her “picking” phase.
I decided to eat the 4 pieces of hot wings left and maybe a small serving of antipasto. But then a light bulb came on. I decided to use the salami, pepperoni and cheese slices from the antipasto, placed them on top of the picked pizza from my Daughter’s plate. Turned the oven on to 365°, placed the pizza squares on a baking sheet, then stuck it in the oven for about 5-6 minutes or so to melt the cheese.
VOILA, instant Pizza Bruschetta. I was able to save the pizza and made a good lunch out of it for myself. So, if you have kids like mine right now, try this idea. Regular deli meat and other cheese can be used as well of course.
