Pinakbet Sans Okra and Calabasa
After braving the Farmer’s Market a few weeks ago, I stopped at the Filipino store on our way home and grabbed a few items for my Pinoy Goodies supplies. I also ended up grabbing fresh vegetables to make one of my favorite Filipino dishes which is Pinakbet. If you haven’t noticed, my pinakbet is missing a couple of key ingredients. These are okra and calabasa (squash). Well, I’m allergic to okra, and I forgot to grab a quarter of the calabasa at the store. I saw sitaw (long green beans), bitter melon, and eggplant and I forgot about the squash. Oh well. Good thing I didn’t forget the alamang. That’s the itty bitty pink fermented shrimp you see all around.
Spam Musubi(Spam Sushi)
The whole family loves SPAM. They love it when I make Spam burger. It’s really good. You just make it like you would make any regular burger. Fry the sliced Spam, and add all the burger fixings on a bun. Sometimes I would just fry ‘em up then we’ll eat them with rice, and a side of pico de gallo. One time I was watching Food Network and there was a Challenge episode involving SPAM. People made all sorts of delicious dishes using Spam. Spamdog ala Corndog didn’t quite impressed me though. I thought that was kind of greasy. But then someone mentioned how Hawaii likes making sushi out of Spam and I got intrigued. It’s called Spam Masubi. From then on, I’ve made sushi rolls using Spam, or this other sushi style that’s cute, and fun for both adults and kids. And it’s too easy to make too.

- SPAM
- cooked sushi rice (sticky rice)
- 2 tbsp of rice vinegar
- salt and pepper
- sprinkle of powdered ginger
- seaweed sushi wraps
- Cook the sushi rice. Put some in a bowl. Add rice vinegar, salt & pepper, and powdered ginger. Mix it together with a spatula.
- Take the Spam out of the can and slice in wide strips. Cut the seaweed in wide strips as well. Set them aside. (You can fry the spam too if you want)
- Grab a ball of rice, about a small meatball size. A golf ball size perhaps. Working with both hands, shape the rice ball kind of rectangular shape.
- Place a half of strip of Spam on top of the formed rice. Wrap a strip of seaweed wrap around it. Repeat the whole process for the remaining Spam, rice, and seaweed wrap.
For the kids, serve with a soy sauce and lemon juice sauce. For adults, wasabi would be great too.

Pork Sisig With Chili Garlic Sauce
We’ve just moved into our new house so we were eating fast food burgers and take out pizza for about a week. I was craving for something pork and homemade but definitely quick to make as soon as I’ve unpacked all my kitchen boxes and finally got some groceries. Pork Sisig was what I’ve thought of instantly.
