Pork & Bittermelon Stir-Fry

I grabbed a couple of bittermelons from my last trip to the Asian store over there in Raleigh. I actually almost forgot I had them until I found a plastic pushed all the way back in the fridge. Good thing I discovered them before they went bad. Whewww. I would hate myself knowing I just wasted perfectly good bittermelons (Ampalaya).  This vegetable happens to be my favorite Filipino vegetable. Even though it’s technically not just found in the Philippines. But I digress..

I decided to cooked these bittermelons the easy way. Sautéed it with sliced tomatoes, onions, and sliced pork. It’s a really easy dish for lunch.

INGREDIENTS :

  • 2 bittermelons, seeded and sliced
  • 2 pork chops, sliced in cubes
  • 1 medium onion, chopped finely
  • 1 tomato, sliced
  • 2 cloves of garlic, chopped finely
  • 1/4 cup of water
  • salt and pepper
  • sprinkle of red pepper flakes
  • vegetable oil

Heat up oil in a sauté pan. Sauté garlic, onions, and tomatoes. Add the pork. Stir and let the meat cook.

Add the bittemelon slices, and water. Season with salt and pepper. Sprinkle red pepper flakes if you want. Stir everything together. Cover the pan and let the vegetable cook.

Serve with rice. In my effort  not eat too much rice, I ate this Pork & Bittermelon Stir-Fry without rice.
