Coconut Chicken With Chestnuts

I had a few pieces left of chicken quarters in the freezer last week. It was the last meat item in our freezer actually before going grocery shopping again. I could not think of what to do with it. I wasn’t in the mood for BBQ or fried. I didn’t feel like chopping vegetables for stir-fry either. I decided to to something I’ve never done before. Combine coconut with chestnuts. Sure, why not?

INGREDIENTS :

  • chicken legs and/or thighs
  • 1 can of chestnuts, drained
  • 1 can of coconut cream
  • 1 cup of water
  • garlic powder
  • Italian seasonings
  • sprinkle of red pepper flakes
  • salt & pepper
  • oil for browning
  • chopped scallions for garnish

 

Heat oil in a non-stick pan. Brown each sides of the chicken. About 2-3 minutes on each sides. Discard most of the oil.

Add the coconut cream. Pour water on the can, kinda mix it up a bit with a spoon. Pour it on the pan with chicken and coconut. Season with salt, pepper, Italian seasonings, and garlic powder. Stir then cover. Let it simmer until the chicken is cooked through. Stirring it occasionally.

At the last minute, stir in the chestnuts, and sprinkle a bit of red pepper flakes. Cook for about 10 more minutes.

I served this with couscous. Rice is ok too :)
