Caldereta-Beef Roast
I’m always raving about how good a caldereta-beef roast cooked in a crockpot is but I’ve ever been able to show pictures, let alone actually blog about it. So here is the long overdue post of this delicious dish that I discovered quite a few months ago.
INGREDIENTS :

a good size of beef roast

1 cup of water

4 red or regular potatoes, cut in halves

a few carrots
Season the beef roast with half of the caldereta mix. Place it on the crockpot. Add the water, then pour the rest of the mix onto the pan. Set your crock pot to cook. If you start it about 9am, pick the LOW setting. HIGH f you’re starting it about 12pm.
2 hours into cooking, add the potatoes and carrots.
If you’re going to cook this in the oven, you need to seal in the juices first. You can do that by pan frying the sides of beef in a little bit of oil 3-5 minutes on each side. Coat the beef with the caldereta mix, then transfer the beef on a roasting pan, cover with foil and cook in a preheated oven (375°) for about 3-4 hours. 3 hours into cooking, add the potatoes and carrots. Keep it covered with foil while cooking.
