White Chocolate Chip Cookies

Before I give you the recipe, let me tell you a story. My nephew from Upstate NY is up here in NC to see my brother-in-law and his family. I found out at about noon today that we’re having a get together party. For 2 hours I couldn’t think of anything I could make for the party. It starts at 7pm. I knew that my dear sister-in-law will have all sorts of dips for chips and most probably finger foods. So I told my husband there is no point in making my own. He suggested potato salad. It’s not a BBQ party and the party sounded like a chips and dips kind of gathering so I doubt anybody would eat potato salad.
On the 3rd hour, I decided to make cookies. Who wouldn’t eat cookies? Especially white chocolate chip cookies.

- 2 1/4 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1 cup butter (2 sticks), room temperature
- 2 tsp vanilla
- 2/3 cup of brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 package of Nestle Tool House Premier White Morsels
- In a bowl, mix together flour, baking powder, baking soda, salt then set aside.
- Cream the butter, brown sugar, granulated sugar and vanilla. Add eggs one at a time, beating well. Gradually add the dry ingredients. Beat until the ingredients are thoroughly mixed. Stir in the white chocolate morsels.
- Drop batter by teaspoonfuls onto the baking sheets; bake 10-12 minutes, 365F
- Transfer the cookies to a wire rack to cool.

Spring "Blossoms" CupCakes

Before my son goes back to school after a short Spring Break thanks to so many snow days, we made cupcakes. He called them Spring “Blossoms” Cupcakes. He said it reminded him of the Apple (or is it Cherry?) Blossoms tree near Nan and Pop’s house.

Toffee & Chocolate Chip Cookies

My husband like toffee bars (HEATH) so once in a while, when I’m not looking, he tries to sneak in a package of HEATH English Milk Chocolate Toffee Bits in the shopping cart for me to use when making cookies.
Using my chocolate chips cookies recipe, I make him happy by baking Toffee & Chocolate Chip Cookies.

- 2 cups flour
- 1 tsp baking powder
- 1/4 baking soda
- 1/4 tsp salt
- 1 cup butter (2 sticks), room temperature
- 2 tsp vanilla
- 1 1/2 cup of brown sugar
- 2 eggs
- 1 package of HEATH English Milk Chocolate Toffee Bits
- Blend flour, baking powder, baking soda, and salt.
- Cream the butter with vanilla. Add sugar gradually, creaming well. Beat in the eggs, then mix in the dry ingredients. Beat until the ingredients are thoroughly mixed. Stir in the HEATH English Milk Chocolate Toffee Bits.
- Drop batter by teaspoonfuls onto the baking sheets; bake 10-12 minutes, 375F
- Transfer the cookies to a wire rack to cool.
You can use the same recipe for regular chocolate chip cookies. Just substitute the HEATH English Milk Chocolate Toffee Bits with chocolate chips. Whether it’s dark, milk, or white, that’s up to you.
