I can’t remember what cooking show my husband and I were watching a few days ago but when we were at the commissary we knew we wanted flank steak just like the one on the show. It looked really really good. Instead of making my own marinate like the grilled mojito flank steak I made during grilling season, I decided to try a Montreal southwestern marinade rub. It was easy, fast and Yummy.

Crock-Pot Herb Roast Chicken

If you ask me what my Top 5 kitchen/cooking gadgets are, crock-pot is probably one of them. It really is my life saver. While I love spending time in my kitchen, cooking and experimenting with different flavors, and recipes, I’m also very busy. Working at home is no easy feat contrary to what others think. Crock-pot has definitely saved my sanity many times.

One of the dishes I make using the crock-pot is an herb roast chicken. it’s different from oven roast chicken. The skin wouldn’t be crunchy but good just the same. Roasting in the oven could dry up the meat but not with crock-pot. It just tenderizes it even more. The meat practically falls off of the bones.

Easy Peasy Sweet Potato Hash

I never understood how some people ruin the natural taste of certain foods. Take for example the sweet potatoes. Besides turning it into a pie as a holiday dessert which I actually love to make and eat, the most common way to cook sweet potatoes during the holidays is peeling, boiling until soft, mash with butter & milk, then laid in a baking pan, topped with marshmallows then baked until the top is a little brown. Some actually even add brown sugar.

I really don’t understand that. I would like the aforementioned dish, minus marshmallows. Sweet potatoes are naturally sweet. Why add more marshmallows and brown sugar? Sure you add sugar when you turn it into a pie but you only really need 1 cup and since it’s a dessert pie, it’s kind of a given that it is sweet. But if it’s a side dish like the regular mashed potatoes, the marshmallows on top are unnecessary. Well, that’s just my preference of course :) .

Mussels, Lobster, Green Peppers, & Tomatoes In Chili Garlic Sauce Stir-Fry

When I grabbed the box of frozen mussels meat from the grocery store a couple of weeks ago I really didn’t have a set plan on what dish I’ll make with it. I thought I would just grab it for “just in case” days. The hubs kept asking me for days what I’ll do with it and I kept reciprocating with lazy “I don’t know”.

I finally cooked the muscles this past Saturday for a quick lunch. It was almost 2pm and since we woke up late, we didn’t have breakfast until about 10am. Lazy bumms we are. By 1:30 everyone was asking what’s for lunch. I didn’t have anything in mind so I just grabbed the box of frozen muscles and lobster chunks which I actually intended to use for a lobster & cream cheese dip like the crab meat and cream cheese canapés we had this past Christmas. But I still need to buy cream cheese so I figured I might as well use the lobster for something else. I came up with a seafood stir-fry that Hubs and I enjoyed. The kids had something else since this was a little spicy thanks to the chili garlic sauce condiment.

Crab Meat & Cream Cheese Canapés

As part of our hors d’oeuvres on Christmas day besides the usual smoked sausage, cheese, crackers, cheese ball, shrimp cocktail and humus dip (same as Thanksgiving Day) before we feasted on Irish soda bread and corned beef brisket, my sister-in-law brought over crab meat and cream cheese dip. We had wheat thins, and different kind of crackers that went nicely with it.

It’s really easy to make this. Just mix together cream cheese (a brick) and a package of crab meat. Don’t use the crab sticks, opt for the sliced/flakes ones instead, They’re easier to mix in with the cream cheese because it separates easily with the fork mashing.
