Filipino Egg Rolls (Lumpia) are one of the best finger foods for parties like Superbowl. I’m going to post a quick recipe here to add into a roundup I’m currently working on. Enjoy.
These babies need to be wrapped a day ahead. You can find the egg roll wrappers at any Oriental store. Some regular grocery stored have them now too. Also, for the veggies, I suggest you buy the packed shredded carrots and cabbages from the vegetable section. It’s actually the coleslaw pack. Just add chopped garlic and onions at home.
- Brown ground beef, drain most of the oil. Leave a little bit for sauteing the rest of the ingredients.
- Add garlic and onions. Let them cook.
- Add the shredded veggies (coleslaw pack). Stir, then season with salt and pepper.
- Just let everything cook. Let them cool for a few minutes before wrapping the egg rolls.
To really serve yourself time, wrap the egg rolls the day before. Store ‘em in the fridge then just fry them up an hour before your party guests arrive. If you’re not having a party, store the egg rolls in the freezer. Take a few out on days you feel like eating some egg rolls.
To fry these up, heat oil in a pan. Fry each sides of the egg rolls. The filling is already cooked so you won’t have to fry ‘em too long.
Make sure to put them in a strainer to drain the oil once fried.
Dip the egg rolls on Sweet & Sour sauce. You can find those in any Oriental store or Oriental aisle at any grocery stores.
