Crock-Pot Herb Roast Chicken

If you ask me what my Top 5 kitchen/cooking gadgets are, crock-pot is probably one of them. It really is my life saver. While I love spending time in my kitchen, cooking and experimenting with different flavors, and recipes, I’m also very busy. Working at home is no easy feat contrary to what others think. Crock-pot has definitely saved my sanity many times.

One of the dishes I make using the crock-pot is an herb roast chicken. it’s different from oven roast chicken. The skin wouldn’t be crunchy but good just the same. Roasting in the oven could dry up the meat but not with crock-pot. It just tenderizes it even more. The meat practically falls off of the bones.

INGREDIENTS :

  • whole chicken
  • various dried herbs : oregano, basil, parsley, thyme
  • salt and pepper

 

If the chicken is frozen make sure to thaw it the day  before.

Unpack the chicken from it’s wrapper. Discard the neck, liver and hearts that are most probably in a separate bag, stuffed inside the chicken. Either throw that bag or save for when you make chicken stock using the leftover bones of the roast chicken.

Wash the roast with cold water. Use paper towels to dry. In a bowl, mix together all the dried herbs, salt and pepper.

Rub the roast with the herbs mixture. Make sure to rub the insides too. Put the chicken in a crock-pot.

Turn it on and set it on low or high. If you start it at 10am, set it on LOW. If you start it about 12pm, set it on HIGH.

This is such a good meal to plan during the weekends. I could do a bit of work, do laundry in between and spend time with the family without having to worry about dinner because it has been cooking on the crock-pot all day. Just pick the sides an hour before dinner.

Make mashed potatoes or rice and veggies (broccoli, corn, etc). I made dirty rice (from a box :) ) and peas.

    Whenever I am window-shopping for kitchen gadgets, I get confused on which to buy – crockpot or slowcooker. So now… crockpot it is!

    Ces, get your butt back to Wal-Mart and buy it. $15 is a good deal. You can’t find one durable under that. Pag under $10, it might fall apart in 2 days..LOL. So spend an extra $5 and get it. :)

    I’ve invited the whole family to ours this xmas for a big dinner, so the roast is pretty central to that.. I found a ton of recipes at this roast recipes site, but cant decide on anyone – there’s so many to choose from! It is fun planning such a big xmas dinner though!
