Mussels, Lobster, Green Peppers, & Tomatoes In Chili Garlic Sauce Stir-Fry

When I grabbed the box of frozen mussels meat from the grocery store a couple of weeks ago I really didn’t have a set plan on what dish I’ll make with it. I thought I would just grab it for “just in case” days. The hubs kept asking me for days what I’ll do with it and I kept reciprocating with lazy “I don’t know”.

I finally cooked the muscles this past Saturday for a quick lunch. It was almost 2pm and since we woke up late, we didn’t have breakfast until about 10am. Lazy bumms we are. By 1:30 everyone was asking what’s for lunch. I didn’t have anything in mind so I just grabbed the box of frozen muscles and lobster chunks which I actually intended to use for a lobster & cream cheese dip like the crab meat and cream cheese canapés we had this past Christmas. But I still need to buy cream cheese so I figured I might as well use the lobster for something else. I came up with a seafood stir-fry that Hubs and I enjoyed. The kids had something else since this was a little spicy thanks to the chili garlic sauce condiment.

INGREDIENTS :

  • small box of frozen mussels meat
  • 1 sm package of lobster chunks/flakes
  • 2 tomatoes, sliced lengthwise
  • 1 sm onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 green pepper, cored, seeded, and sliced lengthwise
  • 3 tbsp of chili garlic sauce (add more if you want)
  • 2 tbsp soy sauce
  • 2tbsp oyster sauce
  • olive oil for sauteing
  • 1/4 cup of water

 

In a non-stick pan, heat up olive oil. Saute garlic and onions first. Than add the tomatoes. Cook it for a minute.

Dump the frozen mussels meat, and lobster chunk on the pan. Cover the pan. The steam from the frozen mussels will serve as it’s liquid. Cook for about 8-10 minutes.

Lift the cover carefully. Stir the whole thing. Season with soy sauce, chili garlic sauce and oyster sauce. Add the water, then the green peppers. Stir gently.

Put the cover back and let that cook for 3-5minutes. Don’t over cook the green peppers.

Voila. Served with cooked white rice. Hubs drizzled a bit of sesame oil on his plate which he said was really good so try that too if you want :) . I actually only used 2 tbsp of chili garlic sauce but Hubs said the more the better so I adjusted the amount while writing this post. To think I was being subtle while cooking which is why I only added 2 tbsp. I didn’t want to overwhelm him with the spice. I should’ve known better :) .
