Leftover Recipe : Turkey & Shrimp Fried Rice

Here’s a simple turkey leftover recipe that’s turned into an Asian meal. With the abundance of turkey leftover because my family of 4 couldn’t have possibly eaten a 20-pound turkey on Thanksgiving Day, I have to be creative in coming up with leftover dishes in order not to bore us all in the coming days.

One thing I’ve came up with is this Turkey and Shrimp fried rice. The shrimps were leftovers from the appetizer plate of shrimp cocktail. Turkey and Shrimp combo? Sure why not?

INGREDIENTS :

  • turkey leftovers, (5-7 slices) shredded or cubed
  • shrimp leftovers, pick the tails out
  • half a can of peas, drained
  • cooked long grain rice
  • 5 stalks of scallion, chopped finely (or 1 small onion)
  • 3 cloves of garlic, chopped finely
  • 1 egg, scrambled
  • soy sauce for seasoning
  • ground black pepper
  • oil for cooking

 

Cook the rice in the morning, or afternoon. Having a rice cooker helps. Once cooked, put it in a cookie sheet, and store it in the fridge until it’s time to cook the fried rice. You want to learn how to make good fried rice like in Asian restaurants? Do this step. Trust me. And make sure it’s long grain rice :) .

In a wok, or in my case since I wasn’t making much, just used a non stick pan, heat oil. Scramble 1 beaten egg. Set it aside.

Add a couple more teaspoonfuls of oil in the pan. Saute garlic and scallions. Once cooked, add the leftover turkey. Let that cook for a bit. About 2 minutes or so. Then add the leftover shrimp. Cook it for a bit as well.

Then add the cooked rice. Stir everything together. Try to break apart the big chunks of rice with the spatula. Don’t worry about stirring it too much. Sprinkle seasoning. Again, I don’t measure stuff like this. I just kind of eye ball it. Obviously you’re not dumping the whole bottle of soy sauce. Not even half a bottle. So to be safe, just sprinkle maybe 3 tbsp of soy sauce, then add a sprinkle of ground black pepper.

To finish it off, add the peas, and stir in the scrambled egg. VOILA! I made this fried rice as a side dish for the pork hocks dish I made as the main entree. I’ll post that recipe some other time :) . Enjoy this turkey leftover dish in the meantime.
