Holiday Side Dish : Cornbread Casserole

Cornbread Casserole is one of the family’s favorite holiday side dishes.  I learned it from a friend who grew up in Louisiana while we were still in the Army and living in Upstate New York. Since then this cornbread casserole has became a staple dish in our holiday menu.

INGREDIENTS : (everything in 2′s)

2 cans corn
2 cans creamed corn
2 boxes corn muffin mix
2 bricks softened cream cheese

Mix everything together in a bowl. Yes, even the liquid from the corn. Make sure the cream cheese is well incorporated on the mixture. A nice spatula would make this stirring and mixing process easier.

Once everything is mixed, transfer it in a baking pan, then bake it in the oven, 365° for 40-45 minutes. Let it cool before cutting into the casserole. Don’t worry if the inside is soft, it’s a casserole, remember? It’s still good :) .
