Baked Tilapia With Balsamic Vinegar Onions Sherry and Tomato Sauce
I found these 2 good looking whole tilapias from Walmart Supercenter for about $7. I planned on grilling them sometime but we ran out of gas so I decided to bake and make a dressing/sauce to match.
The tilapias were already scaled and gutted so I didn’t have to do that dirty part of cooking the fish. Whewww.
INGREDIENTS :
- 2 whole tilapias, scaled and gutted
- salt and pepper
- 4 tsp olive oil
- 4 Romano tomatoes, sliced
- 1 medium onion, sliced
- 3 cloves of garlic, chopped finely
- a few drizzles of sherry wine
- a few of balsamic vinegar
- a little bit of water
- red pepper flakes (optional)
Pre-heat the oven to 375°.
Drizzle olive oil on both sides of the tilapia. Season both sides with salt and pepper. Lay both fish on a baking pan, stick it in the oven and bake until it’s cook. I’ve made this a while back so I can’t remember how long it should bake. 30-40 minutes sounds good.
While the fish is baking, heat the remaining olive oil in a non-stick pan. Saute garlic, onions and tomatoes. Let it cook for about 2 minutes.
Add water, balsamic vinegar, and sherry wine. Stir and let the sauce reduce.
Season with salt and pepper and red pepper flakes if you want. Just a little bit.
Once the tilapias are cooked, transfer them into a nice clean platter. Top with the balsamic-onions-tomatoes sauce.
Serve with steamed rice and green veggies.
FYI : I said “a few drizzles” because I’m an eyeballer. I don’t measure when I’m cooking unless it’s for cakes, cookies, etc..




























The Tilapia looks yummy….but I think I prefer more sauce..
